Camel Milk

Raw or lightly soured whole milk drawn from a she-camel, consumed as a daily staple beverage by pastoral and nomadic communities across arid zones from Somalia to Kazakhstan.
Identity criteria
- 1Milk must come exclusively from a she-camel (Camelus dromedarius or Camelus bactrianus) — cow, goat, or any blend is a different product
- 2Consumed in its whole, unprocessed state — homogenisation, skimming, or UHT processing removes the defining nutritional and flavour character
- 3Naturally thinner and slightly saltier than bovine milk due to distinct protein and fat globule structure
- 4Does not coagulate readily with standard bovine rennet — the inability to form firm curds under normal conditions is a defining property, not a defect
- 5Contains no detectable beta-casein A1 protein and a different whey-protein fraction, which distinguishes it immunologically from cow milk
- 6Fresh-state or mild lactic-acid fermentation only — heavy coagulation, hard cheese production, or sweet cream separation falls outside canonical use

Technique
- Hand or machine milking with calf-stimulus
- She-camels only let down milk in the presence of their calf or a calf-skin decoy; skipping this step suppresses yield and stresses the animal — a generator that omits calf proximity produces an incomplete account
- Ambient lactic fermentation in a seasoned vessel
- The soured variant (suusac) gains its characteristic tang from the resident microbial culture of the gourd, not from a commercial starter — using yoghurt cultures or vinegar acidification breaks provenance
- Minimal-heat or no-heat handling
- Boiling destroys the lactoferrin, immunoglobulins, and vitamin C fraction that define the milk's nutritional identity; the canonical drink is raw or at most gently warmed

- Omitting the calf-stimulus step in accounts of milking practice — this is not optional husbandry detail but the prerequisite for milk let-down
Provenance
Camel domestication in the Horn of Africa and Arabian Peninsula dates to approximately 3000–2500 BCE, and milk consumption is documented as co-extensive with herding from the earliest records. In Somalia, caano geel is both a daily nutritional staple and a social currency — exchanged at weddings, used medicinally, and central to nomadic pastoral identity. The drink exists in parallel across the Sahel, Arabian Peninsula, and Central Asia wherever Camelidae are herded, with each region developing its own fermentation tradition independently.
