A Dublin dry stout brewed with roasted unmalted barley, conditioned on nitrogen, and served via a two-part pour that produces a cascading settle and a dense, tight, long-lasting tan head.
Identity criteria
- 1Roasted unmalted barley (not malted) is the sole source of color and the dry, coffee-bitter finish — no residual sweetness
- 2Nitrogen-blend conditioning (typically 75% N₂ / 25% CO₂) rather than CO₂ alone is non-negotiable for the texture and cascade
- 3The two-part pour — fill to three-quarters, pause for the cascade to settle, then top flush to the rim — is intrinsic to the correct serve
- 4The head must be dense, cream-white to tan, and domed above the rim of the glass with the liquid a near-opaque ruby-black
- 5Dry finish: the absence of sweetness distinguishes it from sweet stout, milk stout, and oatmeal stout

Technique
- Roasting unmalted barley
- Malted roasted grain yields residual sweetness; unmalted barley roasts dry and bitter, producing the signature coffee-chocolate flavor without sugar — swapping in malted roasted barley fundamentally changes the flavor class
- Nitrogen conditioning
- Nitrogen is 100× less soluble in beer than CO₂, so it produces far smaller, more uniform bubbles; the result is the visible downward cascade on pour, the creamy micro-foam head, and a softer carbonation feel on the palate — a CO₂ draft produces none of these
- Two-part pour
- Filling three-quarters then pausing allows the nitrogen cascade to complete and the head to consolidate; topping off then creates a domed, dense head flush with the rim — a single-shot pour traps CO₂ bubbles and yields a coarse, unstable foam
- Surge-and-settle observation
- The apparent downward motion of bubbles along the glass wall (buoyancy paradox: lighter bubbles dragged down by denser surrounding liquid flowing down the sides) is a quality signal; it will not occur in a dirty or wet glass, which also ruins head adhesion

Common mistakes
- Single-shot pour: skipping the cascade settle produces a coarse, unstable head and trapped CO₂
- Serving temperature below 6 °C: over-chilling suppresses the roasted grain complexity and makes the beer taste thin and excessively bitter
- Using a wet or dirty glass: head will not form or adhere; lacing will not appear
- Conflating Guinness Draught with Guinness Extra Stout in recipes — they differ in ABV, carbonation type, bitterness, and mouthfeel
- Describing the color as black: it is a very deep ruby-garnet, visible when held to light
- Treating nitrogen as optional or interchangeable with CO₂ in recipe or service specifications
- Adding sweet or dairy components (cream, chocolate syrup) to approximate the flavor — the creaminess is textural (nitrogen foam), not a sweetness signal
Provenance
Arthur Guinness signed a 9,000-year lease at St. James's Gate, Dublin, in 1759 and began brewing ale; the brewery shifted to porter and stout through the early 19th century. The dry stout recipe and the roasted-unmalted-barley formulation were established by the 1820s. The nitrogen conditioning system — transforming Draught into its modern form — was invented by microbiologist Michael Ash at Guinness in 1959 and commercially launched in 1964.
