- 2Stuffed with a thick walnut-onion paste — walnuts are non-negotiable
- 3The stuffing is soured with fruit (sour plum/alycha paste, pomegranate, or barberry)
- 4Baked (or roasted) whole so the stuffing flavours the flesh
- 5A signature of the Lankaran–Talysh region of southern Azerbaijan

Substitutions
Fish → Chickenadmissible
Both are canonical forms of levengi
Walnuts → Other nuts or no nutsinadmissible
Walnuts are the defining ingredient; without them it is not levengi

Removing the tart fruit destroys the signature savoury-sour balance
Common mistakes
- Omitting or skimping on the walnuts, gutting the dish's identity
- Leaving out the sour fruit, losing the signature tartness
- Letting the lean fish or chicken dry out in the oven
- Making the stuffing sweet rather than savoury-sour
