Mate

A caffeinated infusion of dried, ground yerba mate leaves (Ilex paraguariensis) steeped in a hollow gourd and sipped communally through a bombilla, a metal straw with a built-in filter.
Identity criteria

Technique
- Gourd curing
- A new gourd must be cured (filled with spent mate and hot water, rested, scraped) to seal the interior, remove bitter tannins from the wood, and build the layer that improves flavor over hundreds of uses — skipping this causes off-flavors and mold
- Carga loading (one-sided mound)
- Yerba is loaded to fill the gourd, then the gourd is tilted so leaves slide to one side, creating a clear cavity; the bombilla is inserted into the clear side at an angle — this architecture keeps the filter unobstructed through many refills
- Temperature control at 70–80 °C
- Boiling water (100 °C) denatures the yerba's volatile compounds, produces harsh astringency, and is universally recognized in the tradition as ruining the carga; a thermometer or kettle with temperature setting is standard practice among serious cebadores
- Sequential single-pour refills
- The cebador adds water slowly into the clear cavity, not onto the leaf mound, to avoid disturbing the herb wall; each guest drinks the gourd dry before it is returned for the next fill — this sequential ritual, not mass-pouring, is the social form of mate

Common mistakes

- Pouring water directly onto the leaf mound instead of the clear cavity — forces fine particles through the filter and shortens the carga's usable life
- Discarding the carga after the first drink — mate is intended for many sequential refills; premature discard is a resource and ritual failure
- Presenting sweetened mate without asking — amargo versus dulce is a strong personal preference and offering the wrong form is a social misstep
- Skipping gourd curing on a new vessel — causes mold growth inside the gourd and imparts a raw woody or tannic flavor that takes weeks to develop past
- Shaking or stirring the gourd between pours — resuspends fine particles, accelerates clogging, and signals inexperience to any cebador watching
Provenance
Mate was consumed by the Guaraní people of the Paraná basin long before European colonization, who chewed or infused the wild-harvested leaves of Ilex paraguariensis. Jesuit missions systematized cultivation in the 17th century, spreading the practice across what became Argentina, Uruguay, Paraguay, and southern Brazil. Origin is genuinely shared across these nations, with Uruguay holding the highest per-capita consumption in the world and Paraguay recognized by UNESCO for the tereré variant.
