Nasi Padang

Nasi Padangid

Also: Padang rice

Nasi Padang is an Indonesian way of serving steamed rice surrounded by a wide array of pre-cooked Minangkabau curried and spiced dishes, chosen and paid for by what you eat.

Identity criteria

  1. 1Plain steamed rice as the neutral centre
  2. 2Accompanied by many separate Minangkabau (West Sumatran) lauk dishes, not a single curry
  3. 3Dishes are pre-cooked and displayed, served at room temperature or warm
  4. 4Defined by the cuisine of origin (Padang/Minangkabau), heavily coconut and chilli based
  5. 5A serving and ordering format as much as a dish — hidang (all dishes laid out) or pesan (à la carte)

Substitutions

  • Minangkabau dishesGeneric Indonesian or non-Padang dishesinadmissible

The defining identity is the West Sumatran repertoire; substituting other cuisines makes it not nasi padang

  • Beef rendangChicken or jackfruit rendangadmissible

A common and acceptable variant within the format

  • Sambal ladoNo chilli relishinadmissible

Removes a core flavour pillar of Padang cooking

Common mistakes

  • Treating it as a single dish rather than a multi-dish spread and service format
  • Using non-Minangkabau dishes and still calling it nasi padang
  • Omitting sambal, central to the cuisine's identity
  • Serving the dishes piping hot when they are traditionally room-temperature displayed

Provenance

Originates with the Minangkabau people of West Sumatra and spread across Indonesia and the Malay world through Padang restaurants.
