Pastrmajlija
Also: Macedonian pizza
A North Macedonian oval bread-dough flatbread topped with diced cured/salted meat and baked in a wood-fired oven, often finished with a cracked egg.
Identity criteria
- 1An elongated oval (boat-shaped) leavened dough base with a raised rim
- 2Topped with diced cured or salted meat (traditionally pork; historically lamb), spread over the surface
- 3Named for 'pastrma' — cured/dried meat — which is the defining topping
- 4Baked in a hot wood-fired oven so the dough crisps and the fat renders into it
- 5Frequently finished with a whole egg cracked on top near the end of baking

Technique
- Wood-fired oven baking
- High dry heat crisps the dough base and renders the meat fat into it
- Hand-shaping into an oval boat with raised edges
- The signature elongated form holds the meat and any egg
- Late egg addition
- Cracked on near the end so it just sets and stays glossy

Common mistakes
- Treating it as a pizza with tomato sauce and cheese
- Using fresh meat instead of cured/salted meat
- Making it round rather than the signature elongated oval
- Adding the egg too early so it overcooks
