Choux Steam Leavening
Gelatinized starch and egg proteins form a tight shell that traps its own steam, inflating hollow pastry from within.
Choux pastry (pâte à choux) is a cooked paste of water, butter, flour, and eggs that leavens entirely by steam — no chemical leavener, no yeast. The critical innovation is the initial cooking step (making the panade): flour is stirred into boiling water-and-butter directly on the stovetop, causing the starch to gelatinize and the proteins to partially denature into a smooth, cohesive mass. When eggs are beaten in, the paste becomes a viscous, extensible dough. In the oven, the large quantity of water (from both the paste-water and the egg whites) converts to steam. The gelatinized starch shell stretches to accommodate the pressure before the egg proteins set the expanded structure, leaving a hollow, crisp-walled pastry.
The science
Two sequential reactions make choux work. (1) Starch gelatinization during the panade: when flour is added to boiling water above 60–70°C, starch granules absorb water and swell irreversibly, forming a thick, viscous gel. The gelatinized starch binds the free water and creates a matrix that is extensible under pressure yet strong enough to trap steam. Ungelatinized flour in a cold dough could not do this — the granules would simply rinse out. (2) Egg protein setting in the oven: egg whites (primarily ovalbumin and ovotransferrin) denature and coagulate between 65–85°C, and egg yolk proteins set around 68–72°C. In choux, the oven temperature of 190–220°C brings the pastry surface well above these thresholds quickly, setting the outer shell while steam is still pressurizing the interior. The result is a permanent hollow: once the egg proteins coagulate and the starch structure dries, the shell holds its expanded form even after the steam exits through micro-pores. A critical subtlety is timing: if the oven is opened too early, steam escapes before the protein network is set, and the pastry collapses. The hollow is NOT empty space during baking — it is a pressurized steam bubble that only becomes empty once the moisture evaporates after the proteins have set.
Why it matters
- Choux is the only major pastry that generates all its lift from water already present in the batter — mastering the balance of water content determines the degree of puff.
- The egg ratio controls both extensibility (too few eggs: the paste is too stiff to expand) and structure (too many: the shell is too thin and wet to set before collapsing).
- Understanding the mechanism reveals why oven temperature matters: too low and steam builds slowly, the shell sets before full expansion; too high and the surface sets before steam can inflate the interior.
- The same principle underlies steam-inflated breads like pita and some Middle Eastern flatbreads — the mechanism is identical, scaled to a simple dough rather than a cooked paste.
In practice
- 1Cook the panade properly: the dough should pull cleanly away from the pan sides and form a thin starchy film on the pan bottom — this confirms sufficient moisture has evaporated and the paste is not too wet for the eggs.
- 2Cool the panade to below 60°C before adding eggs: adding eggs to a too-hot paste scrambles the egg proteins before they can be beaten into a smooth emulsion.
- 3Add eggs one at a time and beat fully after each: the correct consistency is reached when the paste falls from a spoon in a slow, smooth 'V' or ribbon — not stiff chunks, not liquid.
- 4Pipe choux immediately after mixing; the paste relaxes slightly on standing and re-chilling changes the expansion behavior.
- 5Bake without opening the oven for at least the first 20 minutes: opening releases steam, drops the oven temperature, and collapses pastries before the egg protein network has set.
- 6Pierce baked choux shells through the bottom immediately after removing from the oven to allow residual interior steam to escape, preventing the shell from softening as moisture condenses inside.
The variables
What to look for
- Panade is properly cooked when the dough pulls away from the pan sides in one mass and a thin, opaque starch film coats the bottom of the pan.
- Paste is ready for baking when it falls from a lifted spatula in a slow, thick ribbon or 'lazy V' — if it holds rigid, it needs more egg; if it flows like batter, it has too much.
- In the oven, choux should begin to visibly puff and color within the first 10–12 minutes; no lift by 15 minutes indicates a paste that was too wet or an oven too cool.
- A properly baked éclair sounds hollow when tapped on the base and feels very light relative to its size.
Common mistakes
- Adding eggs to a too-hot panade: the proteins scramble rather than emulsify, producing a lumpy paste that bakes into a dense, eggy mass.
- Adding all eggs at once: the paste cannot incorporate them evenly; the result is a split, greasy batter.
- Opening the oven during the first 20 minutes: the sudden temperature drop and steam loss deflates the pastry before the protein network can set it.
- Not cooking the panade long enough: excess moisture remains in the paste, producing a too-wet batter and flat, soggy pastry.
- Piping onto a pan lined with heavily greased parchment: choux needs mild traction to grip the surface and rise upward; an extremely slick surface causes it to spread flat.

Etymology and history
The name 'choux' (French for 'cabbage') refers to the rounded, multi-lobed appearance of profiteroles when baked, which resembles a small cabbage head. The technique is attributed to Pantanelli, the pastry cook of Catherine de Medici's court, around 1540, though the modern cooked-paste-with-eggs version was standardized by Carême in the early 19th century. Carême called the paste 'pâte à choux chaude' ('hot pastry dough') to distinguish it from cold-mixed pastry.
