Cryoprotection in Andean Freeze-Drying (Chuño)
The high Andean night exploits brutal cold and dry air to freeze-dry potatoes into a shelf-stable staple that outlasts empires.
Chuño is a freeze-dried potato product developed by Andean civilizations — Tiwanaku, Wari, and later Inca — at elevations above 3,800 m in the altiplano of modern Bolivia and Peru. Freshly harvested potatoes are spread on the ground to freeze solid during sub-zero nights (often −8 °C to −15 °C), then exposed to intense equatorial sun the following day, then trampled to expel moisture, then re-frozen. This cycle repeats over several nights until water content drops from roughly 80% to below 10%. The result is a light, chalk-white (or dark, if unsqueezed) potato that keeps without refrigeration for years — even decades.
The science
Cryoprotection here is the plant's own cellular chemistry turned into a preservation tool. As ice crystals form inside potato cells, dissolved sugars (glucose, fructose, sucrose) and amino acids depress the eutectic point of remaining liquid water, slowing but not preventing intracellular ice formation. This partial cryoprotection limits catastrophic cell rupture: enough cellular structure survives to allow the mechanical pressing step to squeeze out liquid water rather than collapsing the tissue entirely. Sublimation — the direct transition of ice to vapour — is the drying mechanism. At high altitude, atmospheric pressure is roughly 60% of sea level, dramatically lowering the sublimation threshold. The intense UV radiation and low relative humidity of the altiplano accelerate vapour flux from the surface. Repeated freeze-thaw cycling progressively disrupts cell walls, accelerating subsequent water expulsion. In white chuño (tunta), the potatoes are soaked in running stream water during the day to leach out solanine glycoalkaloids and prevent oxidative browning, then refrozen at night — a combination of aqueous extraction and cryo-concentration that also concentrates remaining starches. The end product is a starch matrix with water activity below 0.6, far below the threshold (0.85) for most bacterial and mold growth.

- Enabled the Inca empire's logistical system: chuño stored in qollqa (warehouses) at altitude fed armies, fed famine relief, and underpinned state taxation

In practice
- 1Select small, frost-resistant native potato varieties (papa amarga) with high dry-matter content; large modern cultivars do not freeze-dry as effectively
- 2Optimal nights have clear skies, temperatures below −5 °C, and low humidity — overcast or humid nights stall the process

The variables
What to look for
- After first freeze: potatoes should be rock-hard and frost-rimed, not mushy — softness indicates insufficient freezing
- During pressing: liquid expelled should be clear to slightly milky; dark or foul liquid signals glycoalkaloid-rich tissue that needs stream soaking
- Finished chuño: chalk-white (tunta) or dark grey-brown (chuño negro), very light in the hand — weight loss of 80–85% from fresh
- When broken, the interior should be uniformly dry and starchy white, with no damp or dark core
- Rehydrated chuño has a faintly earthy, slightly minerally smell and a spongy, porous texture that drinks up sauces
Common mistakes
- Using large, high-moisture commercial potato varieties that collapse rather than freeze-dry cleanly
- Stopping after only 2–3 nights when the surface feels dry but the core still contains moisture — leading to mold during storage
- Pressing too hard on the first morning, fully destroying cell structure before subsequent freeze-thaw cycles can complete drying
- Skipping the stream-soaking step for tunta when using bitter papa amarga varieties, resulting in toxic glycoalkaloid levels
- Attempting the process at low altitude where temperatures rarely drop below −5 °C and atmospheric pressure is too high for efficient sublimation

Notes
Black vs. white chuño
Chuño negro is made without stream-soaking: after freezing and pressing, the potatoes are simply dried in sun and wind, retaining their dark pigments and a stronger, more bitter flavour. Tunta (chuño blanco) undergoes stream soaking and emerges white and milder — preferred for finer dishes and considered higher status. Both have been produced for at least 2,000 years.
Modern relevance
NASA studied the Andean process as an empirical precedent for low-energy food preservation in space missions. Industrial freeze-drying chambers achieve what the altiplano does naturally by applying vacuum (0.1–0.5 mbar) to replicate the low-pressure sublimation environment — a direct parallel to conditions above 4,000 m.
