Stall (Evaporative Cooling Plateau)
The notorious BBQ plateau where a brisket's internal temperature parks for hours — evaporating moisture is cooling the meat as fast as the smoker heats it.
The stall is a prolonged temperature plateau that occurs during low-and-slow barbecue cooking, most pronounced in large, collagen-rich cuts like brisket and pork shoulder. After rising steadily, the internal temperature stops climbing — often around 65–75 °C (150–165 °F) — and can remain virtually unchanged for 2–6 hours before resuming its ascent. The mechanism is not mysterious: the surface of the meat is evaporating moisture at a rate that carries away heat energy as fast as the smoker delivers it, producing a thermodynamic equilibrium identical to the principle behind evaporative cooling.
The science
When water evaporates, it absorbs latent heat of vaporization — approximately 2,260 joules per gram at 100 °C, and even more at lower temperatures. A large brisket contains enormous amounts of free and bound water. As the surface temperature rises, evaporation accelerates. The cooling effect of evaporation (essentially the same physics as sweat cooling human skin) can precisely offset the heat being transferred from the smoker's air to the meat's surface. The result is a steady-state plateau. The stall occurs at roughly 65–75 °C because this is where myofibrillar proteins have denatured and begun releasing intracellular water, dramatically increasing surface moisture availability. As the cook progresses further, collagen starts converting to gelatin, the surface dries out (less free water available), and evaporative cooling diminishes — the internal temperature then climbs again. Wrapping the meat in butcher paper or foil (the 'Texas crutch') eliminates the stall by trapping evaporated moisture in the microenvironment around the meat, raising local humidity to near-saturation and shutting down net evaporation.
Why it matters
- Understanding the stall prevents cooks from cranking smoker temperature in a panic — that causes the exterior to overshoot while the interior is still cold.
- The stall's duration is proportional to the cut's surface-area-to-mass ratio and its moisture content, which is why a flat stalls longer than a point.
- Knowing the stall is evaporative allows informed decisions: wrapping shortens cook time but trades smoke permeability for moisture retention.
- Temperature probes appear to malfunction during the stall; understanding the physics prevents misdiagnosis of equipment failure.
- Competition cooks exploit stall thermodynamics to time brisket arrival precisely — they can predict and manipulate when the stall breaks.
In practice
- 1Probe the thickest part of the flat, away from fat pockets; fat reads higher than meat and gives a false sense of progress.
- 2If unwrapped: hold patience — do not raise smoker temperature above 110–120 °C (225–250 °F) during the stall; let evaporation run its course for maximum bark development.
- 3Texas crutch: wrap tightly in pink butcher paper (preferred) or heavy-duty foil at the onset of the stall (~68 °C internal) to push through faster.
- 4Butcher paper allows some vapor exchange and preserves bark texture better than foil, which fully traps steam and can soften the bark.
- 5After wrapping, the temperature resumes climbing at roughly the same rate as before the stall — allocate 2–3 additional hours for a full packer brisket.
- 6Rest the brisket in a cambro or cooler (still wrapped) for at least 1 hour after pulling at ~96 °C — carryover and juice redistribution are essential.
- 7A spray bottle of apple cider vinegar or beef tallow mop during the stall replenishes surface moisture and can slightly extend bark formation before wrapping.
The variables
What to look for
- Thermometer probe reads within ±1 °C for 30+ minutes — this is the stall, not equipment failure.
- Surface of the meat appears moist and glistening during the stall; as evaporation declines, the surface transitions to a dull, tacky bark.
- The bark (pellicle) is firming and darkening during the stall period — the low surface temperature relative to smoker air keeps the bark from burning.
- Steam wisps rising from the meat surface visible when smoker lid is briefly opened confirm active evaporation.
- The stall breaking is accompanied by a resumption of temperature climb at roughly 0.5–1 °C per 5 minutes in a properly maintained smoker.
Common mistakes
- Raising smoker temperature aggressively to 'break' the stall — this overshoots the exterior and tightens the proteins before collagen has converted, producing a dry, tough result.
- Pulling the meat off the smoker assuming it is done because temperature stopped rising — internal temperature of 74 °C is not done for brisket; target is 96–98 °C.
- Wrapping too early (before any bark has formed) — the bark is both flavor and texture; wrapping at 60 °C produces steamed, bark-free brisket.
- Probing through fat or into a collagen seam, which reads higher than the surrounding meat and gives a false 'past the stall' reading.
- Not resting after the stall breaks — the temperature jump from ~75 °C to ~96 °C happens quickly once evaporation stops; skipping the rest wastes the collagen work done during the stall.

Why butcher paper beats foil for bark
Pink (unwaxed) butcher paper is semi-permeable — it absorbs and holds some of the meat's surface fat and juices while allowing a small amount of vapor exchange. This keeps the bark from steaming into mush (foil's weakness) while still dramatically reducing net evaporative cooling. Competition pitmasters favor paper for its bark-preservation property; foil is faster and makes the meat slightly juicier but at the cost of texture contrast.
