Umami
The deep, savoury, mouth-filling taste that makes food taste rich and satisfying.
Umami is the fifth basic taste, alongside sweet, sour, salty, and bitter — the savoury, brothy, 'meaty' depth of parmesan, ripe tomatoes, mushrooms, soy sauce, anchovies, and aged or slow-cooked foods. It's the quality that makes a dish taste full and satisfying, the reason a splash of fish sauce or a parmesan rind transforms a sauce.
The science
Umami is the taste of glutamate (an amino acid) and certain nucleotides (inosinate and guanylate) binding to dedicated receptors on the tongue. Foods become umami-rich when proteins break down into free glutamate — through aging, fermentation, ripening, drying, or long cooking. Crucially, glutamate and the nucleotides are synergistic: combine a glutamate source (tomato, cheese, kombu) with a nucleotide source (cured meat, dried mushroom, bonito) and the perceived savouriness multiplies well beyond the sum of the two.

Synergy is the whole trick
The reason classic flavour bases work — dashi (kombu + bonito), Italian soffritto cooked with tomato and finished with parmesan, a stock with both vegetables and roasted bones — is umami synergy. Glutamate alone is pleasant; add even a small amount of a nucleotide source and the savoury intensity can leap several-fold. When a dish tastes thin, reach for a second, different umami source rather than more of the same.
