Duck Fat
graisse de canard · Rendered subcutaneous and visceral fat from duck, producing a golden, semi-solid fat with a rich, savoury-umami character and high smoke point (~190°C/375°F). The foundational cooking medium of southwestern French and Gascon cuisine, prized for its ability to transfer heat uniformly, create exceptional Maillard browning on starchy surfaces, and impart a distinctively rounded, non-lardy flavour absent in other poultry fats.

The formula
raw duck fat : rendered duck fat = 1 kg → 700–750 g (~70–75% yield)
For preservation seasoning: 100 g rendered fat : 1 g fine fleur de sel (~1% w/w). No water or additional ingredients required.
Identity
- Clean, rendered duck fat is dry (no residual water), which is non-negotiable for storage stability and high-heat use.
- The fat must be strained through fine-mesh with no solids remaining, or those solids will burn on subsequent heating and turn the fat bitter.
- It is used as a cooking medium (not merely a finish), as the hot fat directly contacts the food and drives Maillard browning — this is its defining function.
- Smoke point requires dry fat and watchful temperature; wet fat will spit violently and burn.
- It must taste purely of duck — rich, savoury, clean — with no gaminess, bitterness, or rancidity from overheating or age.
Ingredients

Method
- 1Collect and trim raw duck fat, removing all skin, feather quills, and membranous connective tissue. Cut large fat pieces into 3–5 cm pieces.Clean fat renders evenly. Any protein fragments or skin left in will scorch during rendering, imparting bitter, burnt flavours to the entire batch.
- 2Place trimmed fat in a heavy, wide pan (cast iron or stainless steel) or Dutch oven in a single layer. Add 2–3 tablespoons of cold water.Water acts as a heat buffer and ensures even, controlled melting from the outside inward, preventing sudden splattering and burning before the fat has liquefied.
- 3Cook over medium-low heat (120–140°C/250–280°F), stirring occasionally, until all fat is fully liquefied and the water has completely evaporated — evidenced by cessation of sizzling and crackling.Complete water evaporation is the single critical step distinguishing properly rendered fat from fat that will spoil quickly. The low temperature protects delicate flavour compounds from pyrolysis.
- 4Continue cooking over the same gentle heat until the moisture‑free fat just begins to show the faintest colour change, and the cracklings (membrane pieces) turn light golden and begin to shrink.A brief period of gentle browning on the solids concentrates flavour; beyond light golden the fat will absorb bitter Maillard products. Many classical preparations stop here and strain immediately.
- 5Strain immediately through a fine‑mesh strainer lined with cheesecloth (or a dedicated fat filter) into a clean, dry heatproof container. Do not press the cracklings.Pressing forces liquid from the solids back into the fat, carrying bitter compounds. Straining leaves a perfectly clear, clean fat.
- 6Cool to room temperature, then seal and store. If adding salt for room‑temperature storage, whisk in 1% salt while fat is still liquid.Salt dissolved in warm liquid distributes evenly and acts as a preservative. Refrigerating without salt is equally reliable and does not require salt.
Techniques that matter
Low‑and‑slow rendering
Duck fat contains ~25–30% water by weight. Gentle heat allows controlled phase transition from solid → liquid without violent moisture flash or fat pyrolysis. The 120–140°C window is the classical rendering range.
Dry‑heat finishing (optional browning)
After water evaporates, a brief period of dry heat browns the retained cracklings via Maillard reaction, creating concentrated savoury compounds that some traditions (e.g., cassoulet) deliberately incorporate back into the fat or a dish.
Straining and clarification
Even microscopic solids in rendered fat become bitter carbon particles at frying temperatures. Fine‑mesh straining with cheesecloth is non‑negotiable for high‑heat stability.
Variations & derivatives
Aromatic‑infused duck fatFrance / Italy
Add 2–3 sprigs thyme, 1 bay leaf, and 4–5 black peppercorns to fat during final 10 minutes of rendering. Classic for roasting root vegetables or finishing a cassoulet.
Garlic‑confit duck fatSouthwest France
Render fat with 6–8 smashed garlic cloves until garlic is golden and flavoursome. The garlic‑infused fat is used for roasting potatoes or for the finishing fat on grilled meat. Discard garlic after single use.
Confit duck legs fat (drippings)Gascony, Périgord
The fat leftover from cooking confit de canard legs. It contains concentrated meat juices and flavour compounds; slightly more intensely savoury than plain rendered fat. Used in cassoulet and as a base for sauces.
Schmaltz (Ashkenazi Jewish)Eastern European Jewish cuisine
Technically any poultry fat rendered with fried onions (gefilte), but when made from duck specifically, it substitutes duck fat in Jewish culinary traditions for roasting meats or as a spread.

- chicken fat (schmaltz) → chicken fat — Neutral, lower in flavour complexity. Functional but lacks the distinctive rich, savoury depth of duck fat. Use at 1:1 ratio.
- pork lard (leaf fat) → pork lard — Higher saturated fat, coarser mouthfeel. Flavour profile is different — porky rather than poultry. Functional substitute for frying but fundamentally changes the dish's identity.
- clarified butter (ghee) → clarified butter — Dairy‑based; different flavour entirely. Functional for high‑heat cooking. 1:1 ratio. Not suitable where duck flavour is called for.changes result

Troubleshooting
Fat spits violently when added to a hot pan
Moisture still present in the fat — rendering was stopped before all water evaporated, or fat was stored improperly with moisture introduced. → Re‑render the fat over low heat (120°C) for 15–20 minutes, watching for complete cessation of sizzling. Cool, then re‑strain.
Duck fat tastes bitter or burnt
Rendering temperature was too high, or the cracklings were left to brown too deeply before straining. Solids burned into the fat. → Discard the batch. Bitterness cannot be removed once fat is infused with burnt compounds. Start fresh with clean fat and lower heat.
Fat turns rancid within weeks at room temperature
Insufficient rendering — residual moisture accelerated oxidation. Or fat was not strained free of all protein solids, which spoil quickly. → Render a fresh batch fully dry. Store refrigerated (indefinite) or add 1% salt and keep in a sealed container in a cool, dark cupboard (several months).
