gomme syrup
sirop de gomme · A classic French cocktail syrup of inverted cane sugar dissolved in water and stabilized with gum arabic, producing a viscous, pourable sweetener that resists crystallization and integrates seamlessly into acidic, spirituous, and aerated preparations. The gum arabic forms a colloidal matrix around the sugar molecules, creating a silky texture and permanent suspension that plain simple syrup cannot achieve.

The formula
1:1 sugar : water (by weight), plus 3–5% gum arabic powder relative to total weight
The 1:1 ratio yields 65°Brix syrup. Gum arabic is first hydrated separately in warm (38–45°C) water at 3–4× its weight, rested until fully dissolved (4–12 hours), then combined with the sugar syrup. Adding gum arabic directly to hot sugar causes irreversible clumping.

Method
- 1Combine gum arabic powder with 3–4× its weight in warm water (38–45°C). Stir vigorously. Cover and let rest 4–12 hours until completely dissolved into a viscous, translucent liquid.Gum arabic hydrates slowly and must fully dissolve before heat is applied; direct heat causes irreversible clumping. Resting activates full hydration.
- 2Combine sugar and remaining water in a heavy-bottomed saucepan. Heat over medium, stirring only until fully dissolved. Do not boil. Remove from heat at 85–90°C.Boiling concentrates the syrup unevenly and risks caramelization. Dissolving at this temperature preserves clarity.
- 3Strain the hydrated gum arabic through a fine-mesh strainer or cheesecloth into the warm sugar syrup. Stir gently to integrate.Straining removes any undissolved particles or impurities that would cause cloudiness or gritty texture in the finished syrup.

Gum arabic is a colloidal suspension, not a true solution at room temperature; proper hydration time is non-negotiable for clarity and viscosity.

Confirms correct concentration — under-weighted syrup dilutes drinks, over-weighted syrup crystallizes or is too viscous to pour accurately.
strain and filter
Removes trace undissolved gum particles that would cloud the syrup and feel gritty in the mouth.
spirit preservation
High-proof alcohol inhibits microbial growth, extending shelf life when sugar concentration alone is borderline.
Variations & derivatives

Troubleshooting
Syrup is cloudy or has white flecks
Gum arabic not fully hydrated before addition, or added directly to hot sugar solution causing clumping → Strain through fine mesh; if persistent cloudiness remains, the batch is salvageable for cooking but not for cocktails. In future batches, always hydrate gum arabic in warm water for minimum 4 hours before incorporating.
Crystallization occurs over days
Sugar concentration too high (above 67°Brix), or insufficient gum arabic to stabilize the solution; temperature fluctuations encourage nucleation → Gently reheat and stir in 10–20g additional dissolved gum arabic. Prevent by using a refractometer and storing at stable room temperature.
Fermentation or mold after 1–2 weeks
Under-concentrated syrup (below 60°Brix), contaminated equipment, or storage in non-sterile containers → Add 10–15% high-proof spirit by volume and refrigerate. For prevention: ensure proper Brix, use sanitized bottles, and add spirit as a standard practice.
Syrup is too thick to pour accurately
Excessive gum arabic, or syrup cooled below service temperature causing increased viscosity → Gentle warmth (30–40°C water bath) restores pourability. For future batches, measure gum arabic by weight precisely rather than volume.
