Kiselo mlyako starter (Bulgarian yogurt culture)
Закваска за българско кисело мляко · A reusable, thermophilic lactic-acid starter consisting of a symbiotic pair of bacteria — Lactobacillus bulgaricus and Streptococcus thermophilus — originally isolated by Stamen Grigorov from traditional Bulgarian yogurt. The culture is propagated either as a small reserve of live, set yogurt reserved from each batch or as a lyophilised (freeze-dried) powder sold in sachets/capsules. It is inoculated into pre-heated, then cooled cow, sheep, or buffalo milk to ferment kiselo mlyako, and a portion of each successful batch is itself reserved as the next generation of starter.

The formula
1 g freeze-dried starter sachet (or 1–2 tbsp live-culture yogurt) per 1 L scalded milk
Lyophilised commercial sachets are dosed at 1 g / 1 L (Lactina) or 1 capsule / 1.5–2 L (Biom); heirloom backslopping uses 1–2 tbsp of the previous batch's set yogurt per 1 L of fresh, cooled milk.

- Distinct from mesophilic kefir grains, from single-strain 'yogurt' cultures, and from Greek-style yogurt, which uses different strain ratios and often adds stabilisers

Method
- 1Strain and heat the milk to a boil, then reduce to a gentle simmer for 20–30 minutes.Scalding concentrates solids, denatures whey proteins (improving set firmness), and eliminates competing wild flora that would otherwise compete with the thermophilic culture (LB Bulgaricum; Biom.bg).
- 2Cool the scalded milk to 45–46 °C (approximately skin-comfortable to the touch; verify with a thermometer).The L. bulgaricus / S. thermophilus pair grows optimally at 42–46 °C; cooler milk yields thin, slow fermentation and hotter milk kills the inoculum (LB Bulgaricum specify 45–46 °C).
- 3Sprinkle 1 g freeze-dried starter per 1 L (or stir in 1 capsule per 1.5–2 L, or whisk in 1–2 tbsp of live heirloom yogurt from the previous batch).Freeze-dried cells require a brief moment to rehydrate and disperse evenly; live backslop introduces an already-balanced, fully adapted symbiotic pair (Lactina; Biom.bg).
- 4Mix gently but thoroughly, pour into clean pre-warmed jars or the original yogurt pot, and seal.A clean (not sterilised, but well-washed and rinsed) vessel prevents chemical inhibition; pre-warming prevents a thermal drop that would arrest the culture (Lactina stress well-washed vessels).

- 6Move to room temperature briefly, then chill; reserve 1–2 tbsp of set yogurt in the jar before serving the rest to act as the next-batch starter.Cooling arrests the fermentation; reserving a small 'mother' perpetuates the culture indefinitely (Lactina warn that re-using sachet-derived yogurt too many times causes strain drift and loss of traditional flavour).

Thermophilic incubation at 45–46 °C
Both L. bulgaricus and S. thermophilus are strict thermophiles; oven-with-light, yogurt-maker, or wrapped cool-box techniques all work.
MOTHER RESERVE
Keeping 1–2 tbsp of fresh set yogurt in a dedicated jar is how Bulgarian households maintain a single 'house culture' for years.

Troubleshooting
Yogurt is thin, watery, and slow to set
Milk cooled below 42 °C before inoculation, or incubation temperature too low for the thermophilic pair. → Reheat a small portion to 45 °C and use as a 'warm start'; next batch, hold closer to 45–46 °C throughout incubation.
Yogurt is sharply sour and curdled rather than smooth
Over-fermented beyond 12 h, or incubated above 48 °C where acids accumulate faster than flavour metabolites. → Reduce fermentation to 4–6 h for sachet culture, and verify thermostat; chill promptly when the gel is just set.
Grainy, separated whey on the surface
Rough handling after gelation, or milk simmered so long that the fat cap destabilised. → Disturb the jars as little as possible during incubation and chill before moving.
Stale or off flavour after many backslop generations
Sachet-derived culture drifting; Lactina note that re-using a commercial sachet as a long-term mother unbalances the strain ratio. → Refresh from a fresh sachet every 4–6 generations, or source a new heirloom culture from a Bulgarian household.
