Lovo / Umu (hot-rock earth-oven base)
Lovo · A Pacific cooking infrastructure in which food parcels are slow-roasted on a bed of white-hot volcanic or river rocks, layered with leaves and wet sacking, and sealed under earth. The oven (not the food) is the reusable base preparation, and it is the shared ancestor of the Fijian lovo, Sāmoan umu, and Māori hāngī.

The formula

Approximate proportions per SBS (1 m × 1 m square pit) and CGA (1 m round pit, ~2.5 h cook); traditional larger loads extend to 4–8 h.
Identity
- White-hot volcanic or river rocks are the sole heat source; no flame touches the food once the pit is sealed.
- Stones are laid in a single layer on the pit floor and never stacked (SBS).
- Food is wrapped in banana, breadfruit, or taro leaves — and often foil in modern diaspora versions — before going into the pit.
- Sealed under green vegetation, wet hessian/sacking, and the stockpiled pit soil to trap steam and heat.
- Slow radiant + steam cooking for several hours, not grilling or frying.
- Communal/ceremonial centerpiece; the same hole is typically re-fired and re-loaded across the day.

Method
- 1Dig a pit roughly 1 m square (Fijian lovo) or 1 m round (CGA), reserving the excavated soil alongside.Creates a chamber to hold the hot-rock bed and provides the exact earth that will later be used as the insulating seal.
- 2Place a single layer of rounded volcanic/river rocks across the pit floor and build a hardwood fire on top.Rocks in one layer heat evenly and won't fracture; the fire above drives heat down into the stone mass (SBS).
- 3Burn the fire for 2–3 hours until the rocks are white-hot, then rake out the coals.White-hot stones provide the radiant + conductive heat that will cook the parcels once the pit is sealed.
- 4Lay banana/breadfruit leaves (and/or wet hessian) over the hot rocks, then stack leaf- or foil-wrapped food parcels on top.Leaves protect the food from direct stone contact, generate fragrant steam, and prevent scorching (SBS palusami + chicken method).
- 5Cover the parcels with another layer of leaves and/or wet hessian/sacking.Adds a moist thermal buffer and keeps escaping steam in contact with the food (CGA wet-hessian step).

Techniques that matter
Single-layer stone bed
Prevents uneven heating and rock fracture; ensures every parcel sits the same distance from the heat source (SBS).
White-hot rock test
Stones must glow before food goes in, otherwise the cook stalls before the seal is set.
Wet-leaf / wet-hessian steam barrier
Releases steam slowly against the food, replicating oven-humidity cooking and preventing surface drying.
Earth-seal insulation
Using the stockpiled pit soil guarantees the volume exactly fits the cavity and locks in heat and smoke.
Re-fire / re-load the same pit
Sāmoan umu is traditionally laid out three times a day for sequential meals (The Spinoff).

Troubleshooting
Food scorches on the bottom
Parcels sat directly on white-hot rocks with no leaf or hessian buffer → Always lay a generous bed of banana leaves or wet hessian over the stones before placing food (SBS; CGA).
Stones crack or explode during heating
Porous or moisture-bearing rocks (sandstone, shale, river stones with trapped water) used in place of dense volcanic rock → Source dry, dense volcanic/basalt stones and lay them in a single layer, never stacked.
Cook stalls cold and food is underdone
Rocks not heated to white-hot before sealing, or earth cap too thin / poorly mounded → Burn the fire 2–3 h until rocks glow white, then mound all reserved soil firmly over the seal.
Food comes out dry and lacks steam aroma
Seal dried out or leaf/hessian steam barrier was omitted → Re-wet hessian and add a thick green-leaf layer both under and over the parcels before sealing.
