Sienisalaatti cream dressing

Sienisalaatin kermakastike · A cold, lightly tangy Finnish cream dressing built on whipped heavy cream acidulated with a small amount of vinegar or lemon juice, folded together with finely grated onion, salt-cured forest mushrooms, a trace of sugar, and white pepper. It is the foundational sauce-base of sienisalaatti and is reused across the Nordic festive table.

Troubleshooting

Dressing tastes like the sea / overly saline

Suolasieni were not rinsed and patted dry before folding inDrain the dressing over a sieve, rinse the mushrooms for 30 min in fresh cold water, re-dry and refold; cut further acid so it does not amplify salt.

Dressing thins to liquid and the mushrooms sink after an hour
