Method
- 1Wash the radish tap roots and sun-wilt them for 1–2 days until soft and pliable.Wilting reduces water activity and concentrates cellular sugars, favouring lactobacilli over spoilage microbes and conditioning the tissue for shredding.
- 2Trim off the leafy tops, then shred the wilted tap roots by hand or pound them with a foot-operated dhiki.Maceration ruptures cells, liberates fermentable sugars, and produces small pieces that can be packed densely to exclude air.
- 3Pack the shredded radish tightly into an earthen jar, or into a 2–3 ft pit pre-warmed by burning and lined with bamboo sheath and straw, compressing with a wooden pestle or weighted planks and stones.Dense packing expels oxygen, creating the anaerobic environment that selects for lactic acid bacteria.
- 4Seal the container — jar covered with radish leaves and a heavy stone lid; pit topped with dry leaves, weighted, then plastered over with mud.Mud and leaves lock out oxygen and rainwater, sustaining the CO₂-rich anaerobic chamber needed for lacto-fermentation.

Troubleshooting
Mould growth on jar/pit surface
Insufficient anaerobic seal (air ingress) or contaminated dry-leaf cover → Scrape off superficial mould and re-seal; ensure stone lid is air-tight or re-plaster the pit with fresh mud.
Weak or absent sourness after fermentation
Under-fermentation, low resident LAB load, or pit temperature too cold → Extend pit/jar time by 1–2 weeks and confirm the pit was fire-warmed before packing to jump-start LAB.
Soft, mushy, putrid-smelling sinki
Over-fermentation or contamination by spoilage anaerobes (Clostridium, coliforms) → Discard the batch; next time pack more tightly, shorten fermentation by 3–5 days, and seal with thicker mud layer to exclude soil anaerobes.
Bone-dry, hard-to-rehydrate final product
Over-sun-drying or storage in very low humidity conditions → Soak longer (up to 30 min in warm water) and simmer rather than quick-fry; next time stop drying at the leathery stage.
