Smântână
smântână · Smântână is a Romanian/Eastern European foundational emulsion made by souring pasteurized cow's cream with mesophilic lactic acid bacteria until a thick, tangy, spoonable emulsion forms (pH ~4.6–4.8). It is not a finished dish but a reusable building block used as a table cream, a finishing dollop, a sauce thickener, a soup stabilizer, and a binding element across Romanian, Moldovan, and broader Balkan cuisines. In commercial production it must meet a minimum fat standard (USDA 18% for sour cream; Romanian market commonly stocked at 12%, 18%, 20% and 24% for daily use, with 30–35% used for whipping).

1 L whole cow's milk : 4 tbsp starter smântână or natural yogurt (~17:1)

Method

Troubleshooting
Smântână is too thin/runny
Fat content too low (under 18%) or fermentation stopped too early → Use higher-fat cream (20–24%) or extend fermentation until pH drops below 4.7, then chill thoroughly.
Smântână is too sour/sharp
Over-fermented or held too warm too long → Shorten the warm hold to 10–14 h and chill immediately once the cream just sets.
Grainy or curdled texture
Fermentation too fast (too warm) or starter unevenly distributed → Lower hold temperature to ~22–25 °C and whisk starter thoroughly before setting.
No fermentation / no thickening
Starter culture killed (milk too hot) or inactive/expired culture → Cool milk/cream to ≤30 °C before inoculating, and use a fresh, live smântână or yogurt as starter.
