Súrmjólk
Súrmjólk · An Icelandic fermented milk base produced by inoculating pasteurised cow's milk with live lactic-acid bacteria (traditionally ambient mesophilic cultures carried over from a previous batch; in modern production, Lactobacillus acidophilus and Bifidobacterium bifidum) and holding it until the milk coagulates into a smooth, mildly thickened, distinctly tart liquid. It is not drained or concentrated like skyr, so it remains pourable but spoonable, with a clean acidic edge and light body.

1 L pasteurised milk : 30–50 ml active súrmjólk culture
Fermentation ratio; cultures acidify milk over 12–24 h at 40–45 °C until a soft curd sets and pH falls to ~4.0–4.5.

Method
- 1Heat pasteurised milk to ~72 °C, then cool to 40–45 °C.Standardises the substrate, removes competing flora, and brings milk into the optimal window for mesophilic lactic bacteria.
- 2Whisk in the active culture (defined strains or ~30–50 ml of mature súrmjólk per litre).Even distribution ensures uniform fermentation rather than pockets of curd.
- 3Pour into a clean, covered jar and hold at 40–45 °C for 12–24 hours.Mesophilic LAB acidify until the casein network sets into a soft curd and pH reaches ~4.0–4.5, the point of balanced tartness without over-acidification.
- 4Refrigerate at ≤4 °C to arrest fermentation.Cold storage stops further acid development, allowing the flavour to mellow and stabilise for 1–2 weeks.

Icelandic tradition uses a spoonful of yesterday's súrmjólk to inoculate fresh milk — preserves house flora and gives the characteristic local flavour.

Modern dairies use freeze-dried L. acidophilus + B. bifidum for consistency, probiotic label claims, and food-safety control.

Substitutions
- Súrmjólk → Plain full-fat yogurt, thinned with milk to a pourable consistency — Closest body and tang; acidity may need a squeeze of lemon to match súrmjólk's sharper edge.
- Súrmjólk → Buttermilk + 1 tsp lemon juice per 250 ml — Mimics tartness but lacks súrmjólk's gentle body.
- Súrmjólk → Skyr thinned with milk — Adds the Icelandic provenance note, but sky is denser and milder; thin until spoonable.
Troubleshooting
Milk never sets — remains liquid after 24 h
Culture was inactive, or temperature fell below 35 °C → Re-warm to 42 °C and add a fresh, vigorous culture; verify culture viability before pitching.
Too sharp or harsh in acidity
Over-fermented — held too long or too warm → Stir in fresh cold milk to soften, or shorten future fermentation by 2–4 hours.
Thin, watery body
Skim milk used, or culture under-dosed → Use whole milk and increase culture ratio toward 50 ml per litre for a fuller set.
Lumpy, broken texture
Acidification proceeded too fast (overheating) or milk was stirred after set → Strain through a fine sieve and whisk gently back to smoothness; next batch, hold strictly at 40–42 °C.
