Tamarind pulp

Thai-style paste uses a thicker 1:1 ratio; the 1:3 ratio yields a thinner, pourable pulp suited to Indian sambhar, rasam, and large-batch curries. Indian commercial concentrate (e.g., Tamcon/Tamicon) is roughly 2x stronger than homemade paste — halve when substituting.

Method
