Turshiya mixed pickle
Turshiya · A traditional Balkan and Middle Eastern preserved-vegetable foundation built by submerging a mixed assortment of seasonal vegetables (cabbage, carrots, cauliflower, beets, celery, green tomatoes, peppers) in a 3–5% salt brine — often with a small amount of vinegar as a starter — and lacto-fermenting 7–14 days until the vegetables are crisp, tangy, and stable. The finished pickled vegetables and their active brine function as a reusable condiment base, served cold alongside meats, breads, soups, and Lenten meals.

The formula
1 kg vegetables : 750 ml 3–5% salt brine (1–2 tsp vinegar/L optional)
Vegetables are packed fully submerged; salt is weighed against water (3–5% w/v), not against vegetable mass.

Method
- 1Wash and trim vegetables; cut cabbage and cauliflower into chunks, carrots and celery into sticks, leave green tomatoes and small peppers whole, peel beets into wedgesUniform pieces ferment at the same rate; smaller cut surfaces absorb brine evenly

Techniques that matter
Lacto-fermentation in salt brine
Native lactobacilli on the vegetables convert sugars to lactic acid, producing a stable, probiotic pickle that improves with age
Anaerobic submersion with a weight
Excluding oxygen prevents yeasts and molds from colonizing the surface and spoiling the batch
Loose lid or airlock during primary fermentation
Allows CO2 produced by fermentation to vent while preventing contamination from dust or insects

- Table salt (iodized) → Sea salt or pickling salt (non-iodized) — Iodine and anti-caking agents can cloud brine and inhibit fermentation
- Tap water (chlorinated) → Filtered, spring, or boiled-and-cooled water — Chlorine inhibits the lactobacilli needed for fermentation
- Vinegar starter → Omit entirely — Produces a pure wild ferment with more complex, slower-developing flavor
Troubleshooting
White film or fuzzy mold on the surface
Vegetables floated above the brine line and were exposed to oxygen → Skim the surface film, push vegetables back under the brine, and ensure a weight keeps them submerged; if the entire batch smells off or is pink throughout, discard
Vegetables turn soft or mushy
Fermentation ran too warm, too long, or the salt concentration was too low → Keep future batches at 18–22 °C, check at day 7, and confirm brine strength at 3–5%
Brine stays clear and no tang develops
Water was chlorinated, salt concentration too high (>7%), or temperature too cold → Use non-chlorinated water, recalibrate salt to 3–5%, and move to a 20 °C spot
Jar is bulging or smells yeasty/boozy
Active CO2 production during peak fermentation → Burp the lid daily during days 3–7; this is normal and not spoilage
