Turshiya mixed pickle

Turshiya · A traditional Balkan and Middle Eastern preserved-vegetable foundation built by submerging a mixed assortment of seasonal vegetables (cabbage, carrots, cauliflower, beets, celery, green tomatoes, peppers) in a 3–5% salt brine — often with a small amount of vinegar as a starter — and lacto-fermenting 7–14 days until the vegetables are crisp, tangy, and stable. The finished pickled vegetables and their active brine function as a reusable condiment base, served cold alongside meats, breads, soups, and Lenten meals.

The formula

1 kg vegetables : 750 ml 3–5% salt brine (1–2 tsp vinegar/L optional)

Vegetables are packed fully submerged; salt is weighed against water (3–5% w/v), not against vegetable mass.

Method

Troubleshooting

White film or fuzzy mold on the surface

Vegetables floated above the brine line and were exposed to oxygenSkim the surface film, push vegetables back under the brine, and ensure a weight keeps them submerged; if the entire batch smells off or is pink throughout, discard

Vegetables turn soft or mushy

Fermentation ran too warm, too long, or the salt concentration was too lowKeep future batches at 18–22 °C, check at day 7, and confirm brine strength at 3–5%
