Back-Slopping

The practice of reserving a portion of a successfully fermented batch and using it to inoculate the next batch, transferring active cultures without a commercial starter.
Compound of 'back' (retained portion) + 'slop' (liquid food, from Middle English sloppe); the term is common in dairy and vinegar fermentation literature from at least the 19th century.
Definition
Back-slopping is one of the oldest and most widely practiced techniques in fermentation: a measured portion of a finished or actively fermenting product is held back and stirred into the fresh substrate that will become the next batch. The carryover liquid — whether it is soured kimchi brine, active vinegar mother, sourdough discard, kefir grains or grain-ferment liquid, or a cup of yesterday's yogurt — carries a dense, already-adapted population of the desired microorganisms. Because those organisms are already acclimated to the substrate's chemistry, temperature, and salt level, they can outcompete ambient environmental microbes far more quickly than a wild fermentation starting from zero. The technique is therefore both a shortcut and a continuity mechanism: it shortens the lag phase, reduces the risk of spoilage-organism takeover, and perpetuates the genetic lineage of a particular microbial community across months or years. Back-slopping rates vary by application: sourdough bakers typically reserve 20–30 % of mature starter; vinegar makers maintain a 'mother' that may constitute 10–20 % of the new batch; kimchi home-fermenters may add a few tablespoons of old brine to a new jar. The technique has limits — successive back-slopping without refreshment can drift the community over time, selecting for acid-tolerant strains while losing flavor-producing minority populations, a phenomenon sometimes called 'genetic drift' in fermentation contexts.

Applications by product
In yogurt and cultured buttermilk, back-slopping is the standard domestic method worldwide; the reserved portion contains live Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus. In vinegar, the cellulose-and-bacteria 'mother' (Acetobacter or Komagataeibacter spp.) is physically transferred to inoculate fresh alcoholic substrate. In kimchi, a spoonful of brine from a mature, bubbly batch transfers Leuconostoc mesenteroides to jump-start the new crock. In West African ogi (fermented maize porridge), steep water from a previous batch is added to the fresh grain soak.
Drift risk over time
Repeated back-slopping without ever refreshing from a preserved reference culture (or from wild re-inoculation) tends to simplify the community toward the most acid-tolerant, fastest-growing strains. Commercial dairies manage this by retiring working cultures after a fixed number of generations and restarting from frozen stock. Home fermenters may not notice gradual flavor changes until the product tastes noticeably thinner, less tangy, or less complex than it once did.
