Bark (BBQ)

The dark, lacquered exterior crust on smoked meats formed through Maillard browning, spice rub chemistry, smoke deposition, and evaporative cooling working together over hours.
American English, barbecue tradition; the tree-bark analogy refers to the thick, rugged exterior resembling tree bark; usage documented in Texas and Carolina BBQ communities from at least the mid-20th century.
Definition
Bark is the prized outer layer of barbecued meats — brisket, pork shoulder, ribs, and pork belly being the canonical examples — distinguished by its nearly black, mahogany-to-ebony color, its firm, slightly crunchy texture, and its intensely concentrated savory-sweet-smoky flavor. It forms through a convergence of several simultaneous processes. First, the Maillard reaction browns surface proteins once moisture has evaporated sufficiently to allow surface temperatures to climb above roughly 140°C (285°F). Second, spice rub components — particularly sugars, paprika, black pepper, and chile — caramelize and polymerize, binding to the meat surface. Third, smoke particles (especially phenols, carbonyls, and organic acids from wood combustion) deposit on and bond with the sticky, tacky surface created by the dissolving rub and exuding meat proteins. Fourth, the pellicle — a tacky protein film that forms when the surface dries — provides an adhesive matrix for smoke compounds. Evaporative cooling from moisture evaporating off the surface keeps internal temperatures moderate even as the exterior transforms; this same cooling contributes to the stall in internal temperature. Bark integrity is the central trade-off of the Texas Crutch (foil wrapping): foiling stops evaporation and therefore bark formation, and can steam and soften existing bark. Good bark requires: a sugary, deeply flavored rub applied generously; adequate airflow in the smoker (wet, humid chambers suppress surface drying); and enough cooking time at relatively low temperatures (110–135°C / 225–275°F) without excessive direct heat that would char rather than build. Spritzing with apple cider vinegar or apple juice — a common pitmaster technique — adds acid and a small amount of evaporative surface, refreshing the pellicle without washing away rub.

Sugar vs. salt in the rub
High-sugar rubs (brown sugar, turbinado) produce darker, faster bark but risk burning at higher cooker temperatures or on direct-heat grills. Salt-and-pepper rubs — the Texas brisket canon — produce bark that is more mineral and peppery, relying on protein browning rather than caramelization. Most competition cooks use both sugar and salt to layer sweetness and structure.
Bark on different meats
Pork shoulder (Boston butt) generates some of the most dramatic bark because of its high fat content and long cook time; pulled pork benefits enormously from bark pieces being chopped into the meat for textural contrast. Beef brisket bark is the gold standard in central Texas tradition — a thick, black pepper-and-salt crust that holds up to slicing. Ribs can develop bark but their smaller cross-section means bark-to-interior ratio is naturally high.
