The process of submerging fresh pressed cheese in a saturated or near-saturated salt solution to draw out moisture, form the rind, and season the paste throughout.

Definition

Brining is a post-pressing step in cheesemaking during which a formed curd block is immersed in brine — a solution of non-iodized salt and water, typically at 18–23% salinity (nearly saturated) — for a controlled period ranging from a few hours to several days. Osmosis drives moisture out of the cheese while sodium ions migrate inward, slowing microbial activity and enzymatic action. The process accomplishes several things simultaneously: it seasons the interior paste progressively from the outside in, firms the surface by contracting proteins to form an early rind, and regulates the activity of starter cultures and adventitious microflora that will drive aging. Brine temperature is critical: colder brine (10–12 °C) retards absorption and produces a paler, softer rind; warmer brine accelerates salt uptake but risks unwanted bacterial growth. Brine pH should match the cheese (around 5.2–5.4) to prevent surface defects. Concentration matters enormously: lightly brined fresh cheeses such as mozzarella spend only minutes in low-concentration brine (1–3%); robust wheels of Parmigiano-Reggiano soak for 20–25 days in near-saturated brine. Brining duration is calculated relative to wheel size — roughly one hour per kilogram of curd for medium-salt styles — though traditional makers adjust by touch and observation. After brining, wheels are moved to aging caves where residual surface salt continues to dehydrate the rind and concentrate flavor. Brine is a living solution: it accumulates calcium, whey proteins, and bacteria over time and must be refreshed, filtered, and re-salted to remain effective.

In use

After pressing overnight, the young Manchego wheel was floated in brine for twelve hours — just long enough to draw a firm, leathery rind before transfer to the aging room.

Notes

Iodized salt warning

Iodized table salt inhibits starter cultures and should never be used in cheese brine. Non-iodized sea salt or dairy-grade salt is standard.

Floating vs. submerged

Large wheels that float must be flipped halfway through brining to ensure even salt uptake on both faces. Smaller cheeses or those in perforated molds may be fully submerged with a weighted rack.

Brine saturation test

A fresh egg or potato floats in a correctly saturated brine — a traditional field test still used by artisan makers to verify concentration without a salometer.
