A caramel made by melting dry granulated sugar directly in a pan without water, giving faster color development and more intense, less sweet flavor than a wet caramel made with a sugar syrup.

Definition

Caramelisation à sec is the process of adding granulated sugar — and nothing else — directly to a heavy-bottomed pan over medium to medium-high heat, then melting it into caramel through a combination of conducted heat and patient stirring or tilting. No water, no glucose syrup, and no cream of tartar are added at the start; the sugar is its own medium. **Two staging approaches:** *Staged addition (incremental)*: A thin layer of sugar (20–30 g) is placed in the pan and allowed to melt before the next portion is added. Each addition is stirred into the already-liquid portion, which acts as a 'seed pool' that accelerates subsequent melting. This method gives the cook more control because only a fraction of the sugar is molten and at risk of burning at any moment. Preferred when making caramel sauce, caramel for crème brûlée, or tarte Tatin. *All-at-once method*: All the sugar is placed in the pan simultaneously and melted by gentle agitation (swirling or occasional stirring) over steady heat. Requires careful temperature management to avoid hot spots burning while the center is still granular. Professional kitchens with induction hobs or even-heated copper pans favor this method for speed and cleaner technique. **Chemistry**: Sucrose melts at approximately 160 °C and begins undergoing caramelization reactions — a complex cascade of pyrolysis, isomerization, condensation, and dehydration — that produce hundreds of flavor and aroma compounds: diacetyl and maltol (buttery/sweet notes), furanones (toffee), and bitter, high-molecular-weight polymers (the characteristic caramel bitterness that deepens as color darkens). The Maillard reaction does not occur in dry caramel because there are no amino acids present; the reactions are purely thermal sugar chemistry. **Color-to-temperature guide**: pale golden (155–165 °C, mild, sweet); medium amber (165–175 °C, classic caramel); dark amber to mahogany (175–185 °C, complex, bitterssweet); black (above 190 °C, burned/acrid — unusable). **Crystallization risk**: Unlike wet caramel, where glucose syrup or cream of tartar is added to the water to prevent sucrose crystals from re-forming during cooking (crystallization, or 'seizing'), dry caramel is inherently more prone to sudden mass crystallization if a spoon or utensil introduces a crystal nucleus, or if undissolved sugar on the pan sides falls into the liquid melt. Keeping the pan sides clean with a damp pastry brush (paradoxically introducing a tiny amount of water) or simply using a clean, dry pan and working confidently prevents this. **Stopping the cook**: dry caramel continues to brown from residual heat long after the burner is off. Arresting color at the exact right moment requires either plunging the pan into a cold-water bath or immediately adding the cream or butter called for in the recipe — both methods drop pan temperature rapidly. When cream or butter is added to hot dry caramel, a violent steam eruption is expected; adding cold liquid in a thin stream while stirring, or using room-temperature cream, reduces spattering.

In use

Make the caramel à sec by tipping the sugar into a dry pan over medium heat and melting it in three staged additions, swirling between each, until you reach a deep amber before pulling the pan off the heat and slowly whisking in the warm cream.

Dry vs. wet caramel: when to use each

Wet caramel (sugar dissolved in water before heating) is more forgiving for beginners: the water slows temperature rise and gives more time to achieve even browning before risk of burning. The trade-off is slower cooking and a slightly less concentrated flavor because water must fully evaporate first. Dry caramel is faster, produces a slightly more complex and less cloyingly sweet result, and is necessary for pralin/praliné (where nuts are added to the dry sugar) and nougatine (where the caramel must be thin and quick). Experienced pastry cooks generally prefer dry caramel for candy work; wet caramel for sauces and brittles where timing is less critical.

Equipment matters

Copper or heavy stainless pans with a thick aluminum-clad base heat most evenly and reduce the likelihood of local hot spots. Thin, lightweight pans create hot patches where the caramel burns before the rest has melted. A candy thermometer is useful for beginners; professionals judge by color (observed in good light, not just overhead LED) and aroma (the first whiff of bitterness signals proximity to the correct endpoint).
