Degassing (Coffee)

The release of CO₂ from freshly roasted coffee beans that must largely complete before brewing produces a balanced, fully extracted cup.

Definition
During roasting, coffee beans undergo the Maillard reaction and pyrolysis at high heat, producing large volumes of carbon dioxide trapped within the bean's cellular structure. After roasting ends, that CO₂ slowly escapes — a process called degassing or outgassing. Freshly roasted coffee can contain 6–10 ml of CO₂ per gram, and this gas actively disrupts extraction: it repels water, creates uneven saturation, and causes the grounds bed to bubble and heave, leading to channeling and under-extraction. As a result, specialty roasters and experienced brewers rest whole-bean coffee for a minimum of 24–72 hours after roast before grinding, and longer — often 5–14 days — before espresso, which uses fine grinds and high pressure and is most sensitive to gas interference. The bloom, the 30–45 second pre-infusion step in pour-over and French press brewing, is the field indicator of residual degassing: grounds swell visibly as trapped CO₂ escapes on contact with hot water. A vigorous bloom signals freshly roasted coffee; a flat, non-reactive bed signals coffee that is stale or has fully degassed. Roast level affects the degassing curve — darker roasts degas faster because the cellular structure is more porous; lighter roasts hold gas longer and may require extended rest. Specialty coffee valves on bags (one-way outgassing valves) allow CO₂ to escape from sealed packaging without admitting oxygen, balancing freshness and degassing needs for retail.

Degassing rate variables
Temperature accelerates degassing — beans stored at room temperature lose CO₂ several times faster than beans kept in a freezer. Some roasters freeze beans immediately post-roast to halt degassing and preserve volatile aromatics, pulling them out only when needed.
Espresso vs. filter rest windows
Filter brews (pour-over, French press) are generally well-served at 3–7 days post-roast. Espresso typically benefits from 7–14 days, sometimes longer for very light roasts, because high-pressure extraction amplifies any CO₂ interference. Roasters often print roast dates rather than best-by dates to help brewers calibrate their own rest window.
