Flambé / Flamber

The technique of igniting alcohol added to a hot pan, burning off the ethanol to concentrate flavor, caramelize sugars, and produce aromatic compounds while delivering theatrical effect.

Definition
Flambé (verb: flamber) is the act of adding a spirit or fortified wine to a hot pan and deliberately igniting it so that the alcohol burns with a visible flame. The fire burns for 15–60 seconds until most of the ethanol is consumed, leaving behind the congeners, esters, and caramelized sugars that give the spirit its flavor character. The technique produces three real culinary effects: the rapid combustion creates new flavor compounds through Maillard-adjacent caramelization of sugars in the alcohol; the ethanol that burns off would otherwise contribute harsh, raw alcohol heat to the dish; and the brief burst of very high heat (above 400 °C in the flame itself, though only at the pan surface) can develop a faint crust on proteins or fond already present. In practice, not all the ethanol burns — studies suggest 25–35% remains in most flambéed dishes — so flambé is not a method for eliminating alcohol, but for modulating its character. Spirits must be at least 40% ABV (80 proof) to ignite reliably at typical pan temperatures; lower-alcohol wines and beers do not catch. Beer and wine may be deglazed but not flambéed. Classic flambé applications include Crêpes Suzette (Grand Marnier or Cointreau), Bananas Foster (rum), Steak Diane and Boeuf Stroganoff (brandy or cognac), Cherries Jubilee (kirsch), and Saganaki (Metaxa or ouzo). The technique is also used to singe pin feathers from birds (the singeage step in French brigade kitchens) and to flamber a whole roasted bird to achieve a mottled, dry skin. Safety is the operative concern: the pan must be off or tilted away from an overhead extractor fan, the cook's face and sleeve clear of the pan, and the bottle kept well back while the flame is active.

Does it really change the flavor?
McGee and López-Alt both confirm that yes, measurable flavor change occurs: ethanol's harsh top note burns away, and the brief intense heat caramelizes residual sugars and volatile esters. But the effect is subtle — a careful reduction can achieve a similar result. The theatrical flame is often the larger part of the experience, especially in tableside service. Whether that theatricality is 'warranted' depends on context: justified in Crêpes Suzette or Cherries Jubilee where the drama is built into the dish's identity; often gratuitous when added to a pan sauce purely for show.
Alcohol content and ignition
For a pan flambé to catch, the alcohol should be warm (not cold from the bottle) and the pan already hot enough to vaporize it on contact. Cognac, armagnac, dark rum, calvados, kirsch, and 80-proof bourbon all ignite readily. Wines, vermouth, and beer will not catch at standard pan temperatures; they can contribute flavor through reduction but not through combustion.
The singeage application
Professional poultry preparation uses flamber differently: a whole cleaned bird is briefly passed over an open gas flame (or a flaming torch of spirits is applied) to singe fine pin feathers and remaining fuzz from the skin. This is the original professional use of flamber in the brigade kitchen — flavor transformation is a secondary benefit there, appearance and cleanliness are primary.
