A dome- or barrel-vaulted oven heated by burning wood directly on the floor, capable of temperatures exceeding 400 °C; the standard for Neapolitan pizza and traditional bread baking worldwide.

Definition

The forno a legna (Italian: 'wood oven') is one of the oldest cooking chambers in human history, found in ancient Rome, medieval France, and across the Arab world, and still the reference standard for Neapolitan pizza, sourdough bread, roasted meats, and flatbreads across dozens of cultures. The classic structure is a thick-walled dome of refractory brick or terracotta set over a flat stone or brick floor (the platea), insulated externally with sand and clay or vermiculite. Heat is generated in two phases: the fire, built from hardwood (oak, beech, and fruit woods are preferred; pine and resinous softwoods are avoided for the acrid smoke), raises the floor and dome to working temperature over 1–3 hours; once the dome transitions from black (soot-coated) to white (pyrolytic clean), the fire is pushed to one side or raked out and the retained thermal mass — floor stone and dome walls — delivers the cooking energy. At full pizza heat (430–500 °C floor surface), a Neapolitan pizza cooks in 60–90 seconds, with the cornicione (crust edge) blistering and leopard-spotting from direct radiation while the base crisps from conductive floor heat. Flame position, floor temperature (measured with an infrared thermometer), and dome reflection all require active management: rotating the pizza every 15–20 seconds ensures even char. For bread, the fire is extinguished, the floor swept and mopped, and loaves loaded at 280–320 °C, then baked as the temperature gradually falls — mimicking the historic village baker's descending-heat schedule. Residual heat at 150–200 °C is used for slow-braised dishes, porchetta, dried vegetables, or ricotta. The flavour contribution of a wood-fired oven is debated among scientists but is real in practice: wood combustion volatiles, smoke compounds, and the near-infrared radiation spectrum of glowing embers produce surface caramelisation and char characteristics that electric or gas replication cannot fully replicate.

In use

The pizzaiolo slid the margherita into the dome with a long-handled peel, rotated it after forty seconds, and pulled a perfectly leopard-spotted pizza from the forno a legna ninety seconds after it went in.

Floor temperature management

The floor is the limiting variable. After a fire, the surface may exceed 500 °C directly beneath where the flame burned, while zones three feet away sit at 380 °C. Test with a handful of flour — it should turn golden-brown in about 8 seconds at Neapolitan pizza temperature. Mopping with a wet cloth normalises the surface and creates a short burst of steam useful for bread loading. Over-mopping drops the floor and requires another small fire to recover.

Wood selection

Dense hardwoods with low moisture (below 20% moisture content) burn hotter and cleaner. Oak and beech are European standards; in the US, hickory and cherry are common. Resinous woods (pine, spruce) produce creosote deposits and impart off-flavours. Split logs 30–40 cm long ignite reliably from a central flame and allow the baker to control the size and position of the fire precisely.

Regulatory note

Many urban jurisdictions now restrict wood-fired combustion appliances due to particulate emissions. Some pizzerias operate under variance permits or have switched to gas-assist hybrid ovens that maintain the thermal mass and cooking characteristics while meeting air quality regulations.
