Inoculation Rate

The weight of active starter (or levain) expressed as a percentage of the total flour weight in a dough, governing how fast fermentation proceeds and what flavor profile the finished loaf develops.

Definition

Inoculation rate — sometimes called starter percentage or levain percentage — is one of the master variables in sourdough baking. It is calculated by dividing the weight of active starter or built levain by the total flour weight in the formula, then multiplying by 100. A dough containing 50 g of starter and 500 g of flour has a 10 % inoculation rate. The percentage has an outsized effect on fermentation dynamics. At high inoculation rates (20–30 %), there is a large population of active wild yeast and lactic acid bacteria relative to the available food supply. Fermentation is rapid — bulk fermentation may complete in 3–5 hours at room temperature — and the flavor tends toward mildly lactic (yogurty, creamy) because the faster pace favors homofermentative lactic acid production over the slower acetic pathway. At low inoculation rates (5–10 % or less), the smaller microbial population must slowly multiply before significant gas production begins, stretching bulk fermentation to 8–16 hours or more. This extended time at lower temperatures preferentially develops acetic acid, yielding a sharper, more assertively sour loaf with greater complexity. Very low rates (1–3 %) are used for overnight cold retard schedules where timing control matters more than raw speed. Inoculation rate interacts closely with dough temperature, ambient temperature, hydration, and the vigor of the specific starter culture. A warm kitchen demands a lower rate to prevent over-fermentation; a cold kitchen or refrigerated retard allows a higher rate. Professional bakers often express the levain as a percentage of prefermented flour (the amount of flour already fermented in the levain relative to total dough flour), which differs from the raw starter weight percentage but encodes the same concept. Adjusting the inoculation rate — rather than changing temperature alone — is one of the most precise levers for controlling when a dough reaches peak fermentation and what flavor profile it carries into the oven.

In use

Expecting a late-afternoon bake, she dropped the inoculation rate from 15 % to 8 % and left the dough to bulk overnight at 18 °C, counting on the slow, cold ferment to pull out more acetic character.

Calculating prefermented flour

When a levain is built (rather than using raw starter directly), the relevant figure for flavor control is the prefermented flour percentage: the weight of flour inside the built levain divided by total recipe flour. A 200 g levain built at 100 % hydration contains 100 g of flour; in a 1,000 g total-flour recipe, that is 10 % prefermented flour, regardless of how much raw starter seeded the levain.

Typical schedule ranges

Same-day bake (8–10 h total): 15–25 % inoculation at 24–26 °C. Overnight room-temperature bulk: 5–10 % at 18–22 °C. Cold retard after short bulk: 8–15 % with retard at 4 °C for 8–16 h. Very slow cold retard (24–36 h): 1–5 % at 4–8 °C.
