Kahm Yeast

A flat, white or cream-colored film of wild yeast that forms on the surface of vegetable ferments; generally harmless but a sign of fermentation conditions that need adjustment.
/KAMM yeast/The term 'kahm' is of uncertain origin but is widely used in English-language fermentation literature. 'Film yeast' is used in commercial fermentation contexts. The yeasts themselves are ubiquitous wild strains present in most natural environments.
Definition
Kahm yeast is the informal name for a group of wild, aerobic yeast species — most commonly Pichia anomala, Pichia fermentati, Debaryomyces hansenii, and related Candida strains — that form a thin, flat, matte-white or off-white film on the brine surface of vegetable ferments. Unlike mold, kahm yeast does not produce visible fuzz or raised structures; its film is flat, often slightly wrinkled or papery in texture, and typically white to cream to faintly yellow in color. Kahm yeast develops when aerobic conditions on the brine surface favor yeast over the anaerobic lactobacilli that drive healthy fermentation; conditions that encourage it include: brine salinity below 2% (too low salt fails to suppress competing organisms); elevated temperature (above 24°C / 75°F); excess sugars in the ferment from high-sugar vegetables like beets or carrots; and exposure to open air above the brine line. Crucially, kahm yeast is not dangerous and does not produce toxins — the low pH of an active lactic ferment prevents pathogenic bacteria from proliferating regardless. However, kahm yeast does produce off-flavors — musty, cheesy, slightly bitter notes — that can penetrate the brine and the vegetables over time, so removal is advisable. Management: skim the film off with a spoon, add a small amount of salt to raise brine concentration, ensure the vegetables remain fully submerged (a weight or zip-lock filled with brine works), and lower the fermentation temperature. Kahm yeast recurs readily if conditions remain the same; persistent recurrence indicates an underlying environment issue, not contamination. Critical distinction from mold: mold is fuzzy, three-dimensional, and potentially toxic (especially Aspergillus species other than A. oryzae, or any black/pink/green fuzz). Any fuzzy growth should be treated with caution; flat white film is almost always kahm.

Kahm vs. mold — the critical visual test
The single most important distinction in ferment troubleshooting: kahm yeast is always flat and smooth (sometimes finely wrinkled, like a thin tissue). Mold is fuzzy, raised, three-dimensional, and often multicolored (green, black, pink, blue). A flat white film is almost certainly kahm and can be skimmed off safely. Any fuzzy growth — especially in colors other than white — should be treated as potentially hazardous mold: discard the jar, sterilize the vessel, and start again.
Prevention over remediation
Kahm yeast prevention is primarily environmental. Keep salt at 2–3% of vegetable weight for most ferments. Maintain cool fermentation temperatures (18–22°C / 64–72°F). Keep all vegetable matter fully submerged below the brine line using a weight (a clean stone, a zip-lock bag filled with brine, a purpose-made fermenting weight). Limit excess air exposure by using an airlock or placing a piece of plastic wrap directly on the brine surface. High-sugar vegetables (beets, carrots) are more prone to kahm — use slightly higher salt ratios for these.
Off-flavor penetration
If kahm yeast is allowed to grow unchecked for an extended period (more than a week), the musty, yeasty off-flavors it produces can permeate the brine and the vegetables themselves. Early skimming prevents flavor damage. If the pickles already taste musty or cheesy, the off-flavor cannot be removed — but the product is still safe to eat.
