Kaun, known as *akanwu* in Igbo, *kanwa* in Hausa, and loosely called potash or lye salt in English, is a naturally occurring alkaline mineral compound — predominantly potassium carbonate, sodium carbonate, or a mixture (trona/natron) — harvested from ancient lake deposits, particularly from Chad, northeastern Nigeria, and Cameroon. It has been a fundamental ingredient in West African cooking for centuries, functioning as both a chemical tenderizer and an impromptu thickening agent. **How it works:** When dissolved in water, kaun raises the cooking liquid's pH to between 8 and 11. This alkaline environment accelerates the breakdown of hemicelluloses and pectin in plant cell walls, dramatically softening tough vegetables — bitter leaf (*Vernonia amygdalina*), fluted pumpkin leaves, and garden egg — in a fraction of the normal cooking time. The same alkalinity gelatinizes mucilaginous compounds in okra and certain legumes, contributing to the characteristic viscous texture of soups like Igbo ofe onugbu or Efik edikang ikong. **In bean and legume cooking:** Adding a small piece of kaun to dried black-eyed peas or cowpeas cuts cooking time by thirty to fifty percent while contributing to a creamier, thicker pot liquor. This property made it especially valuable before the era of pressure cookers. **In njahi and cornmeal preparations:** Kaun is used in nixtamalization-adjacent processes in parts of Nigeria and Cameroon, softening certain starchy seeds and making nutrients more bioavailable. **Physical forms:** Kaun is sold as yellowish to grey-white rocks, flat discs, or powder in West African markets. Quality varies significantly; purer, whiter pieces from Borno State are prized. It dissolves in water to produce a slightly astringent, mildly salty solution used as cooking water. **Caution:** Kaun must be used in small quantities — a piece the size of a grape, or one-quarter teaspoon of dissolved solution per large pot. Excess kaun makes food soapy, destroys heat-sensitive nutrients, and can impart a harsh, chemical taste. It should not be confused with lye (*sodium hydroxide*), which is far more caustic and unsafe for direct use.

Sourcing Outside West Africa
Kaun is sold in African grocery stores in the diaspora, typically labeled 'potash,' 'akanwu,' or 'kanwa.' It can also be purchased online. Baking soda can approximate some effects in okra soups (use sparingly — one-eighth teaspoon per pot) but does not replicate the mineral complexity or the soup-thickening synergy.
Nutritional Implications
Alkaline cooking destroys heat-sensitive vitamins, particularly thiamine (B1) and ascorbic acid (C). Traditional cuisines using kaun tended to be supplemented with fermented and sun-dried foods that replaced these nutrients. Modern nutritional guidance recommends minimizing kaun use or reserving it for specific applications.
