Lamination (Dough)

The technique of stretching fermented dough into a thin, translucent sheet on a lightly wet surface, then folding it over itself — either to incorporate inclusions or to build additional gluten strength.
Definition
In bread baking, lamination refers to stretching a piece of bulk-fermented dough into a large, very thin rectangle — thin enough to see light through in the manner of a windowpane — then systematically folding it over itself in thirds or quarters. The technique has two distinct purposes depending on context. For gluten development, a single lamination session (performed once during bulk fermentation, after initial mixing but before the stretch-and-fold stage begins) dramatically increases dough strength because the sheet stretches every gluten strand to near its maximum extension before stacking the layers. The effect persists through the remainder of bulk, giving the baker a head start on structure without over-tightening the dough early. For inclusions — seeds, nuts, dried fruit, herbs, cheese, olives — lamination distributes the add-ins evenly and gently. After stretching the dough into the sheet, the inclusions are scattered across the surface, then the dough is folded over itself in overlapping layers to encase them. Because nothing is kneaded in, fragile inclusions (like walnuts or cheese) are not crushed, and the folding action actually locks them in place without tearing the gluten web. Lamination is distinct from the lamination used in viennoiserie (croissants, kouign-amann), which involves rolling cold butter into dough to create separate fat-and-dough layers. Bread lamination uses no added fat; it works purely through mechanical extension of the existing dough structure.

Timing within bulk
For gluten development, lamination is most effective roughly 30–60 minutes into bulk fermentation, after the dough has had an autolyse or brief rest but before it has become too gas-laden and fragile to stretch thin. Attempting lamination too late in bulk risks deflating the dough and losing the open crumb structure.
Inclusion proportions
A common ratio for inclusions distributed via lamination is 15–25% of flour weight. Higher proportions risk interrupting gluten continuity to the point where the dough cannot hold its final shape during proofing. Very fine seeds (poppy, sesame) can go higher; chunky additions (walnuts, dried apricot) should stay toward the lower end.
