Aging wine on its spent yeast cells after fermentation, allowing autolytic breakdown to contribute creamy texture, brioche character, and increased complexity.

/lyooz AY-jing / soor LEE/French: 'sur lie' means literally 'on the lees'. English 'lees' from Old French 'lie', possibly from Medieval Latin 'lia' (sediment). The practice predates formal winemaking nomenclature — ancient Greek and Roman texts describe leaving wine on its sediment.

Definition

Lees (French: lie) are the sediment that accumulates in a wine vessel during and after fermentation — principally dead and dying yeast cells, along with grape solids, tartrate crystals, and polysaccharides. 'Sur lie' denotes leaving the wine in contact with these lees rather than racking it off immediately. Over weeks to months, the yeast cells undergo autolysis: their cell walls break down and release intracellular contents including proteins, polysaccharides (notably mannoproteins), and long-chain fatty acids into the wine. These compounds produce characteristic organoleptic effects: a creamy, round mouthfeel; aromas of fresh bread, brioche, toasted nuts, and yeast; and enhanced volume on the palate. Lees aging also provides natural micro-reductive protection, reducing the need for sulfur additions and shielding the wine from premature oxidation. In Muscadet (Loire Valley), wines labeled 'Muscadet Sèvre et Maine sur lie' must rest on lees until bottling — a legal designation that guarantees minimum autolytic character. Burgundian white Burgundy (Chardonnay) aged in barrel with lees stirring (bâtonnage) represents another archetype. In sparkling wine production, lees contact is mandated and measured: Champagne NV must age 15 months on lees minimum; vintages 3 years; prestige cuvées routinely 5–10 years. This extended aging is what produces the signature autolytic complexity of mature Champagne — biscuit, ginger, almond, and brioche notes that distinguish méthode champenoise from tank-method sparklers.

In use

The Muscadet spent 18 months sur lie before bottling, and its telltale pinprick of effervescence and saline brioche quality confirmed the benefit of that extended lees contact.

Fine lees vs. gross lees

Winemakers distinguish gross lees (grape solids, seeds, skin fragments — discarded by early racking) from fine lees (primarily yeast cells — the fraction kept for autolytic benefit). Quality sur lie aging targets fine lees contact only.

Reductive protection

Yeast cell walls act as a glutathione source, a natural antioxidant that scavenges dissolved oxygen. Wines aged sur lie therefore require less protective SO₂ and are at reduced risk of premature oxidation.

Beyond wine

Craft brewers and cider makers adopt analogous lees-aging practices; some aged on yeast cakes in the manner of traditional Belgian lager or unfiltered ciders. The autolysis mechanism is the same.
