A three-legged stone grinding slab used in Mexican and Central American cuisine to grind masa, mole, salsas, and chocolate — producing textured, paste-like results that no blender can fully replicate.

Definition
The metate (from Nahuatl metlatl) is a rectangular or slightly curved slab of vesicular basalt or granite, set at a forward tilt on three integral legs, used in conjunction with a cylindrical rolling stone called the mano or metlapil. The cook stands behind the metate, places the ingredient on the sloped surface, and presses the mano forward and down through the material with body weight rather than arm strength — each stroke grinding the substance against the rough, porous stone surface. The angle of the slab means the grinding motion always moves downhill, causing the ground paste to accumulate at the front edge where it is gathered and re-introduced to the top for additional passes. The metate has been in continuous use in Mesoamerica for at least 4,000–5,000 years and remains irreplaceable for certain preparations. Nixtamalized maize (corn treated with cal) ground on a metate produces masa with a specific texture — slightly coarse, with torn cell walls rather than cleanly cut ones — that contributes directly to the pliability and flavor of handmade tortillas and tamales. Mole negro and other complex Oaxacan and Pueblan moles rely on the metate to grind toasted dried chiles, chocolate, spices, and seeds into a unified paste that, by design, retains subtle graininess and integrates fats differently than a blender emulsification. The basalt surface itself contributes trace minerals detectable in the flavor of metate-ground products. A blender produces smoother, more homogeneous, slightly aerated results — useful for some salsas — but lacks the shear force, temperature neutrality, and surface character of stone grinding. Commercial stone mills (molinos de nixtamal) found throughout Mexican markets are the scaled industrial equivalent, still preferred over blenders for tortilla masa production.

What a blender cannot replicate
The metate does not cut or chop — it shears and crushes. When dried chiles, soaked and toasted, are ground on basalt, the cell walls are torn open and compressed, releasing oils that coat the particles uniformly. A blender's rotating blade slices and aerates simultaneously, creating a slightly emulsified, foamy texture and a flavor that is cleaner but thinner. Experienced mole cooks describe the blender result as 'agua' (watery) and the metate result as 'cuerpo' (bodied). For mole negro or mole coloradito cooked over hours, that density of paste matters — it is what gives the sauce its characteristic texture when it hits the hot fat in the cazuela.
Using and maintaining a metate
A new metate must be seasoned ('curado') before use: rice, then maize, are ground repeatedly on the stone to fill the pores of the basalt and remove any grit that would transfer to food. Afterward, the metate is simply rinsed with water after use — never soap — and dried. Stone metates are heavy (10–20 kg), practically indestructible, and commonly passed across multiple generations. Those made from volcanic basalt with visible vesicles (air pockets) are preferred; smooth granite is considered inferior because it offers less gripping surface to initiate the shear.
