Definition
Pachamanca (Quechua: 'earth pot') is an ancient Andean communal cooking method in which a pit is dug in the earth and lined with volcanic stones — typically rounded andesite — heated to extreme temperatures over a wood fire. Marinated meats (traditionally cuy, lamb, pork, and chicken), potatoes, sweet potatoes, habas (fava beans), and maize are layered among the stones, then the pit is sealed with grasses, aromatic herbs (huacatay, muña), and soil to trap steam and radiant heat. The food cooks over 1.5–3 hours through a combination of steam, conduction from the stones, and residual smoke. The result is intensely flavored, falling-tender meat with a subtle earthiness that no above-ground method replicates. Pachamanca remains a living ritual food tied to Andean cosmology — 'Pacha' (earth) and 'manca' (pot) together honor Pachamama, the earth mother — performed at festivals, harvests, and family milestones across Peru, Bolivia, and highland Ecuador. A government-supervised commercial form using clay-pot inserts exists in urban restaurants, but purists consider only the pit version authentic.

Stone selection
Only dense volcanic stones (andesite, basalt) are safe for pachamanca — sedimentary or porous stones absorb moisture and can shatter explosively when heated. Andean communities maintain dedicated cooking stones, often passed across generations.
Herb layer
Huacatay (Tagetes minuta, black mint) is non-negotiable to most cooks; it perfumes the steam and signals authenticity. Muña (Minthostachys mollis) and chincho are regional additions that vary by valley.
Urban adaptations
Chefs including Gastón Acurio have referenced pachamanca technique in tasting-menu contexts, replicating the stone-steam environment using sealed ceramic vessels — a gesture toward the original, though the terroir component (actual Andean earth) is absent.
