Pin-Boning

The process of locating and pulling the thin intermuscular pin bones from a fish fillet using fish tweezers or needle-nose pliers.
Definition
Pin bones are fine, needle-like intermuscular bones that run lengthwise through the thickest dorsal portion of many round fish fillets — salmon, trout, cod, pollock, halibut, and others. Unlike the main vertebral frame, which is removed during filleting, pin bones remain embedded in the flesh and must be extracted individually. The technique involves running a clean fingertip along the centerline of the fillet, pressing lightly to feel each bone tip protruding slightly from the flesh. A dedicated fish bone tweezers (or fine-point needle-nose pliers) grips each bone as close to the flesh surface as possible and extracts it in the direction the bone angles — typically toward the head end, not straight up — to avoid tearing the surrounding muscle fibers. Pulling against the grain splays and shreds the flesh, creating a ragged fillet surface that cooks unevenly and presents poorly. Cod and similar dense white fish have particularly firmly anchored bones; chill the fillet first to firm the flesh and reduce tearing. Salmon fillets typically carry 20–25 pin bones in the dorsal third. For service in fine dining, chefs double-check by running a folded paper towel over the fillet surface (the bones catch on the paper). Pin-boning is one of the most labour-intensive prep steps in fish cookery and is a marker of a kitchen's care and professionalism.

Grain direction matters
Pin bones in salmon and trout angle toward the head of the fish. Always extract in that direction — with the grain — not straight up or toward the tail. The bone shaft follows a slightly curved path anchored by connective tissue; pulling head-ward follows this natural path and releases the bone cleanly. Pulling tail-ward or straight up levers against connective tissue and tears a hole in the fillet.
Skin-on vs. skin-off
Pin-bone before skinning when possible, as the intact skin provides a stable base that prevents the fillet from skidding while you work. Once skinned, fillets are slippery and prone to tearing under the pressure of extraction.
Species variation
Flat fish (sole, plaice, flounder) have a different bone architecture — long lateral 'frills' rather than pin bones — and are handled differently. True pin bones are found in round fish. Within round fish, the count and thickness vary: salmon has many, moderately thick bones; whiting and mackerel have fine, numerous bones; sea bass and snapper have fewer but can have larger ones near the belly cavity.
