Definition
Probe tender is both a qualitative test and a target state of doneness for large, collagen-rich cuts of meat — most commonly brisket, pork shoulder, short ribs, and lamb shoulder — that require extended low-heat cooking to become palatable. The test is performed by inserting an instant-read thermometer probe, a metal skewer, or the pointed end of a leave-in probe into the thickest part of the meat (on a brisket flat, this is the center of the thickest section; on a pork shoulder, between the blade bone and the surrounding muscle). When the meat is probe tender the probe meets almost no resistance as it enters and exits — pitmaster Aaron Franklin describes the sensation as pushing the probe into soft butter or warm peanut butter. The concept is foundational because internal temperature alone is an unreliable indicator of doneness for collagen-heavy cuts. The collagen-to-gelatin conversion (a process that begins around 70 °C / 160 °F but is not meaningfully complete until sustained periods at higher temperatures) is time- and temperature-dependent; identical cuts from different animals or different muscle groups can reach textbook 'done' temperatures (195–205 °F / 90–96 °C) while still being rubbery if the cook was rushed, or while being fully gelatinized at lower temperatures given longer holds. Additionally, thick cuts plateau (the 'stall') at around 150–170 °F as evaporative cooling matches heat input from the pit — a thermometer reading can be misleading for hours during this phase. The probe test bypasses ambiguity: when it passes with no resistance, the cooking is done regardless of what the thermometer says. After probe tender is confirmed, the meat is typically rested in a warmed cooler (a technique called 'Texas Crutch rest' or 'cambro hold') for 1–4 hours, which allows carryover conversion, redistributes juices, and firms the gelatin network so the meat slices rather than crumbles.

Why Temperature Alone Misleads
Collagen conversion is kinetic, not just thermal: a brisket held at 180 °F for six hours converts more collagen than one driven rapidly to 205 °F. Different muscles (point vs. flat on a brisket) finish at different times because the point has a much higher fat and collagen content. Probe multiple sites before declaring the cook done.
The Hold
Resting probe-tender meat in a 140–160 °F (60–71 °C) cambro or cooler for 1–4 hours (sometimes called a 'hot hold') continues collagen conversion, allows gelatin to set, and makes slicing dramatically cleaner. Franklin Barbecue holds briskets for up to 8 hours before service.
