The temperature-versus-time curve applied during coffee roasting, governing the sequence of drying, Maillard reactions, first crack, and development that determines the final flavor of the bean.
/rohst PROH-fyl/The systematic charting of roast curves emerged in the late 19th century with drum-roaster commercialisation in Europe; the modern data-logging approach was pioneered in the 1990s–2000s by companies such as Cropster and Artisan Roaster, which turned roast profiling from artisan intuition into reproducible science.
Definition
A roast profile is the complete thermal trajectory of a batch of green coffee through a roaster drum or fluid-bed chamber, typically plotted as bean temperature (or drum temperature) against elapsed time. Professional roasters track this curve in real time with data-logging software and shape it deliberately through four interlocking variables: charge temperature (how hot the drum is when beans are loaded), rate of rise (how quickly bean temperature climbs — the RoR curve), airflow (which carries away moisture and drives Maillard products), and heat application (burner gas or electrical input). A roast passes through several physiological stages: drying (green beans lose their ~11% moisture, turning yellow and smelling of hay), Maillard browning (sugars and amino acids react, generating hundreds of aromatic compounds and the familiar brown colour), then first crack — an audible cracking as cellular structure expands and releases CO₂ in an exothermic reaction. Development Time Ratio (DTR) is the most closely watched metric: the proportion of total roast time spent after first crack begins. Specialty roasters typically target DTR of 20–25%. A short DTR produces underdeveloped, baked, or cereal-like flavors; a long DTR drives roastiness, bitterness, and carbon notes. Second crack, at higher temperatures (~225 °C), signals the onset of pyrolysis — the destruction of aromatic precursors and the emergence of the dark, oily, low-acid profiles associated with French or Italian roast. Light roasts (stopped just after first crack) retain origin character — floral, fruity, terroir-driven notes; dark roasts trade this complexity for boldness, body, and uniformity across origins.

Development Time Ratio (DTR)
DTR is calculated as (time from first crack to drop) ÷ (total roast time) × 100. A roast of 10 minutes with 2 minutes of post-crack development has a 20% DTR. Specialty roasters debate optimal DTR fiercely; the consensus range is 20–25%, but high-density coffees or specific flavor targets may justify going slightly higher. Underdeveloped profiles (DTR < 15%) often taste grassy, sour, or bread-doughy regardless of extraction technique.
Rate of Rise (RoR)
RoR is the first derivative of the bean temperature curve — how many degrees per minute the beans are gaining heat. A healthy RoR starts high (often 12–18 °C/min early in the roast), then tapers smoothly downward toward first crack. A 'flick' (RoR that rises again late in the roast) or a 'crash' (RoR dropping to zero or negative) are defects: the former scorches the surface while the interior is still underdeveloped; the latter 'bakes' the coffee, creating flat, papery, or bread-crust flavors.
Roast Level and Origin Character
Light roasts preserve the volatile aromatic compounds that express terroir — the soil, altitude, variety, and processing of a specific farm. A washed Ethiopian Yirgacheffe, for instance, reveals jasmine, bergamot, and stone fruit flavors only when roasted light. Darker roasts destroy these delicate compounds and replace them with roast-driven flavors (caramel, smoke, dark chocolate, carbon) that are largely indistinguishable across origins. This is why specialty roasters favor lighter profiles while commodity and blending roasters favor dark.
