Definition

To sear (French: saisir, 'to seize') is to expose a protein — meat, fish, poultry, or tofu — to a very high, dry-heat surface with the deliberate goal of triggering the Maillard reaction: the cascade of chemical interactions between amino acids and reducing sugars that occurs above approximately 140–165°C (285–330°F) and produces hundreds of new flavour and aroma compounds alongside the characteristic brown crust. A true sear requires three conditions: a very hot pan (cast iron, carbon steel, or stainless steel retain heat best); a dry protein surface (surface moisture must evaporate before browning can begin — pat the protein completely dry before seasoning); and minimal movement (the protein must be left undisturbed long enough to release naturally from the pan before it is turned, or the crust tears). The pan temperature should be high enough that a drop of water skates and evaporates immediately — the Leidenfrost point. Oil with a high smoke point (refined avocado, grapeseed, or clarified butter) is added just before the protein to prevent sticking and distribute heat evenly across any surface irregularities. A sear is not a means of 'sealing in juices' — that myth, traceable to Justus von Liebig (1847), was definitively disproven by food scientist Harold McGee. Searing contributes flavour and texture, not moisture retention. In French kitchen language, 'saisir' is the verb and implies the first violent contact with heat; subsequent cooking may continue via roasting, braising, or resting.

In use

She dried the duck breast, scored the fat cap, and pressed it skin-down into a cold pan — then raised the heat so the fat rendered slowly before the final hard sear turned the skin to lacquered mahogany.

The 'sealing in juices' myth

Justus von Liebig proposed in 1847 that high heat coagulates surface proteins into a moisture-impermeable crust. Every controlled experiment since — most accessibly summarised by Harold McGee — has shown that a seared piece of meat loses as much or more moisture as an unseared one cooked to the same internal temperature. The value of searing is entirely flavour and texture: the Maillard compounds are among the most complex and satisfying in the cook's repertoire.

Moisture management

The single most common searing failure is a wet protein surface. Water must reach 100°C before it can evaporate; until it does, the pan temperature drops and steam prevents direct contact between fat and protein — the crust never forms. Patting dry, then allowing a salted protein to air-dry uncovered in the refrigerator for 30–60 minutes, eliminates this problem almost entirely.

Reverse sear

A now-standard refinement: cook the protein low and slow to target internal temperature first, then sear at maximum heat for 60–90 seconds per side. Because the interior is already cooked, the sear can be performed rapidly without risk of overcooking the edge layers — producing a thinner, more even crust and a larger uniformly-cooked interior cross-section than the traditional sear-then-roast sequence.
