Silverskin

The iridescent, indigestible connective-tissue membrane that sheaths whole muscles and must be removed before cooking to prevent toughening and curling.

Definition

Silverskin is the common butcher's term for the dense, pearlescent fascial membrane — technically the external perimysium or epimysium — that encases skeletal muscles. Unlike intramuscular collagen in connective tissue, which dissolves into gelatin during long, moist cooking, silverskin is composed primarily of elastin, a protein that does not break down under heat. It remains tough, rubbery, and inedible regardless of how long it cooks. Beyond texture, silverskin causes active structural problems during cooking: - **Curling and distortion**: Because silverskin shrinks faster than muscle fiber under heat, a tenderloin or backstrap left with the membrane intact will bow, curl, and cook unevenly. - **Moisture barrier**: It can impede surface browning and prevent rubs and marinades from penetrating the underlying meat. - **Unpleasant mouthfeel**: Even when cut across the grain, any silverskin remaining in a slice presents as a chewy, stringy element that pulls free from the cooked meat. **Removal technique**: The standard method uses a thin, flexible boning knife. Slide the blade tip under a small flap of silverskin near one end of the muscle, angle the blade slightly upward (away from the meat), and use long, gliding strokes to peel the membrane free while pulling the loosened flap taut with your free hand. Work in sections along the muscle's length. Too steep an angle wastes meat; too shallow a grip loses purchase on the membrane. Salt and a paper towel on the grip hand improve control. Silverskin appears prominently on beef and venison tenderloin, pork tenderloin, rack of lamb (the fell), chicken tenders (the white tendon is related but distinct), and most game muscles. On beef tenderloin specifically, butchers remove the 'chain', the side muscle, and the silverskin as three distinct cleaning steps before the loin is portioned into tournedos, châteaubriand, or filet mignon.

In use

Before seasoning the venison backstrap, she slid her boning knife under the silverskin and peeled it away in two long strips, exposing the clean, burgundy muscle beneath.

Elastin vs. collagen

Collagen — the more abundant connective tissue in meat — hydrolyzes to gelatin above 160°F (71°C) over time, which is why braised short rib becomes meltingly tender. Elastin, the primary protein in silverskin, does not hydrolyze under culinary temperatures. This makes silverskin removal non-negotiable; no amount of cooking time will tenderize it.

The fell on lamb

The paper-thin membrane covering a rack or leg of lamb is called the fell. It is silverskin by another name. Classical French technique removes it entirely; some cooks leave it on bone-in roasting cuts to help the joint hold its shape during roasting, trimming it tableside. Either is defensible, but the fell left on chops will cause curling at the grill.

Game and wild meat

Wild venison, elk, and boar muscles often carry more silverskin than their farmed counterparts, and the membrane on game can have a stronger 'gamey' odor due to glandular proximity during field dressing. Meticulous silverskin removal is considered good practice in wild game cookery both for texture and for flavor.
