Soaker

A mixture of whole or cracked grains, seeds, or dried fruit pre-hydrated in water (or other liquid) before incorporation into dough, preventing them from stealing moisture from the gluten network during mixing.
Definition
A soaker is a preparatory step in which hard, absorbent inclusions — rolled oats, cracked wheat, sunflower seeds, millet, rye flakes, flaxseeds, dried cherries, currants, or similar — are combined with water and allowed to hydrate fully, usually for a minimum of 1 hour and up to overnight at room temperature (or refrigerated for cold soaking). The rationale is straightforward: dry grains and seeds are hygroscopic — they will draw moisture away from the dough during mixing and baking, resulting in a gummy, dense crumb around the inclusions and an overall drier loaf. By fully saturating the inclusions in advance, they no longer compete with the gluten network for water; they contribute texture and flavor without disrupting dough hydration. The soaking liquid itself is typically counted as part of the formula's total water, though a small percentage is lost to absorption that is not released — bakers usually calculate a 10–15 % retention factor for whole grains. Beyond moisture management, soaking also initiates partial enzymatic activity and acid development (particularly relevant in sourdough systems), softens cell walls for a more pleasant mouthfeel, and reduces phytic acid in whole grains, improving mineral bioavailability. Some formulas use hot water or scalded milk for the soaker (a technique called a 'scald' or 'tangzhong-style soaker') to partially gelatinize the starch in the inclusions, further softening them and extending shelf life. Salt is sometimes added to a soaker to slow fermentation if it is held overnight, and to season the inclusions.

Soaker versus scald
A cold soaker hydrates inclusions with ambient or cold water over several hours. A scald (also called a brühstück in German baking tradition, or an ahalt in Scandinavian rye traditions) uses boiling or very hot water and achieves the same moisture saturation in minutes, while additionally gelatinizing starches in the grain surface and producing a sweeter, softer, more paste-like inclusion. Hot scalds are common in rye-heavy formulas (pumpernickel, Rugbrød) where the grain proportions are high and gelatinization is desirable for crumb texture and shelf life.
Calculating soaker water in a formula
When a soaker is used, the water absorbed by the inclusions must be counted as part of the formula's total water. A practical approach: weigh the soaker ingredients dry, weigh the water added, then weigh the drained soaker after hydration. The difference between the water added and the water that drains off is the retained water — this is counted in the formula hydration. Many bakers simplify this by using a fixed ratio: 100 g grain to 120–130 g water for a cold soak, expecting roughly 100–110 g of retained, fully hydrated soaker.
Seed soaker flavor effects
Soaking flaxseeds releases mucilage (a gel-like polysaccharide) that acts as a water-binding agent within the dough, contributing to moisture retention and extended shelf life. Sunflower seeds soaked overnight develop a slightly sweet, nutty flavor due to enzyme activity. Poppy seeds benefit from soaking to soften their hard seed coat, improving texture and releasing more of their characteristic flavor into the crumb.
