The progression of an onion through heat from raw and sharp to translucent and sweet, then golden and savory, then deeply caramelized — each stage yielding a distinct flavor profile.

Definition

Onions undergo a series of chemical and structural transformations as heat is applied over time. Understanding each stage — and stopping at precisely the right one — is foundational to most savory cooking worldwide. **Stage 1 — Raw (0–2 min, high heat or 0–5 min, medium):** Pungent, sharp, sulfurous. Lachrymatory compounds (propanethial S-oxide) are fully active. Texture is firm and crisp. **Stage 2 — Softened / Translucent (5–10 min, medium heat):** Cell walls break down as moisture releases. Sulfurous bite mellows; the onion turns glassy and slips easily under a spoon. Sugars remain largely intact. This is 'sweating' — cooking without browning, often covered to trap steam. Target for risotto bases, French onion soup foundations, and most sautéed vegetable starts. **Stage 3 — Golden / Lightly Browned (10–20 min, medium to medium-high):** Free moisture has mostly evaporated. Maillard reactions begin at the surface as amino acids and reducing sugars react. Flavor becomes savory-sweet, nutty, and complex. Color ranges from pale gold to amber. This stage is the target for biriyani fried onions, tarka, and many pasta sauces. **Stage 4 — Deeply Caramelized (45–90 min, low heat):** Sustained low heat drives off remaining water and drives sucrose breakdown (caramelization proper) alongside ongoing Maillard browning. The onion collapses into a jammy, intensely sweet-savory concentrate. Volume reduction of 70–80% from raw is normal. Essential for French onion soup, Alsatian tarte flambée, and Italian agrodolce. High heat accelerates color but burns the exterior before the interior softens — low and slow is the only reliable path. Common error: calling lightly softened onions 'caramelized.' True caramelization takes far more time and yields a fundamentally different flavor compound suite, including diacetyl, furanones, and pyrazines.

In use

The recipe asks you to cook the onions until deeply caramelized — budget at least 45 minutes over low heat, not the 10 minutes most shortcuts suggest.

Why 'caramelized' is consistently misused

Recipes routinely instruct cooks to caramelize onions in 5–10 minutes. Food science research (notably López-Alt's controlled tests at Serious Eats) has repeatedly shown this is physically impossible at normal stovetop heat without burning. True caramelization requires dehydration first, which takes time. Setting accurate expectations is the first step to getting the right result.

Temperature control

Stage 2 (softening) typically runs at medium or medium-low, around 140–160 °C at the pan surface. Stage 4 (deep caramelization) should run at 120–140 °C — barely above a sizzle — to coax out sweetness without scorching. A lid or splash of water rescues a pan that has dried out too fast.
