Tahini Seizing and Recovery

The counterintuitive phenomenon in which tahini thickens dramatically and seizes into a stiff paste when a small amount of water is added — and why adding more water reverses it.

Definition

Tahini — ground sesame paste composed almost entirely of oil and protein-rich sesame solids — behaves unexpectedly when water is introduced. Adding a small quantity of water (or lemon juice, which is largely water) causes the paste to seize: it instantly thickens, stiffens, and becomes grainy, forming a dense, clay-like mass that resists stirring. This phenomenon is the inverse of typical emulsion behavior and puzzles many cooks on first encounter. The mechanism is essentially an over-emulsification: the small amount of water is insufficient to coat and separate all the sesame solid particles, so they instead clump together and expel the oil from the matrix, compressing the proteins and starches into a tight, hydrated mass. The solution is paradoxical — add more water. As additional liquid is incorporated, the ratio of water to sesame solids eventually crosses the threshold at which the solids can be fully suspended: the mixture loosens, the oil re-integrates, and the paste transforms into a smooth, pourable sauce. This principle applies universally across the tahini-making process: every acid (lemon), every water addition, and every blending stage must navigate through the seize zone. Knowing this allows cooks to deliberately thicken tahini sauces by adding just enough water to seize, then stopping — producing a thick, spreadable paste for sabich or falafel plates. Continuing to add water yields the thin, drizzleable consistency used for drizzling over hummus or roasted vegetables.

In use

When the first squeeze of lemon turned her tahini to a stiff, pale lump, she kept adding water tablespoon by tablespoon, and within moments the paste loosened into the silky sauce she wanted.

The same mechanism in chocolate

Tahini seizing is closely analogous to chocolate seizing: a small amount of water causes cocoa particles to clump and the fat to separate. In chocolate, the fix is the same — add enough liquid (cream, water, milk) to push through the seize into a smooth ganache. The structural principle — small water = clumping, sufficient water = suspension — operates identically.

Practical technique for hummus

When making hummus, many cooks add lemon juice and garlic to the tahini first and allow it to seize and rest for a few minutes before adding ice water gradually. This prior seasoning of the tahini — which becomes very thick and pale during the seize — is thought to improve the final creaminess by ensuring the sesame proteins are fully hydrated and loosened before chickpeas are added.

Temperature matters

Cold tahini seizes more readily and recovers more slowly than tahini at room temperature. Room-temperature tahini — stirred well from a jar that has had its oil separated — flows more freely and passes through the seize zone with less resistance. Chilling a tahini sauce after blending is fine, but starting with cold tahini from the refrigerator will make the technique harder.
