Trafilatura al bronzo describes the process of forcing pasta dough at high pressure through dies (trafile) machined from bronze, a material with natural microscopic roughness. As the dough passes through the die channels, the bronze surface imparts thousands of tiny striations and pores on the pasta's exterior. The resulting surface is matte and almost sandy to the touch — a stark contrast to the glossy, almost plastic sheen of pasta extruded through Teflon (PTFE)-coated dies, which became dominant in industrial production from the 1960s onward because they run faster, require less cleaning, and produce a uniform, non-stick surface. The textural difference is functional: the rough surface created by bronze extrusion dramatically increases the pasta's specific surface area, allowing sauces — particularly oil-based, tomato, and meat ragù — to cling mechanically rather than slide off. Bronze extrusion also runs at slower speeds, which creates lower frictional heat and is thought by many pasta makers to preserve more of the grain's flavor compounds. Drying after bronze extrusion is traditionally done slowly at low temperatures (below 50 °C) over 24–72 hours, compared to the industrial high-heat rapid drying (up to 90 °C) used for Teflon-extruded pasta. Producers emphasize that slow low-temperature drying avoids the Maillard reaction in the dried pasta itself, keeping the color pale gold rather than brown and retaining more of the wheat's aroma.

Bronze vs. Teflon: A Practical Comparison
Side-by-side tastings consistently show that bronze-extruded pasta holds sauce more visibly, but the difference is most dramatic with thin, oil-based sauces (aglio e olio, cacio e pepe) where mechanical grip is the only adhesion mechanism. With thick béchamel or very dense ragù the difference narrows. The surface roughness also affects cook time slightly — bronze-extruded pasta can take 30–60 seconds longer to cook through because the porous surface changes how water penetrates.
Industrial Context
Italy's large pasta brands (Barilla, De Cecco) shifted almost entirely to Teflon dies in the 1960s–70s for throughput. The artisan bronze-drawn revival accelerated in the 1990s and 2000s, led by Campanian and Abruzzese producers like Gragnano cooperatives, Afeltra, and La Fabbrica della Pasta. Today 'trafilata al bronzo' appears on packaging as a quality signal, though standards are loosely defined and some producers use bronze only for the final die, not the full extrusion path.
