Amazake (Koji to Cooked Rice, 1:1)

Equal weights of rice koji and freshly cooked rice, held at 55–60 °C for 8–10 hours, triggers enzymatic saccharification that transforms starch into a naturally sweet, fermented rice drink with no added sugar.

Amazake is a thick, sweet, mildly fermented Japanese beverage made by allowing rice koji (Aspergillus oryzae–inoculated rice) to saccharify cooked white or brown rice. The 1:1 ratio by weight is the standard home and artisan formula: it delivers enough amylase enzyme activity from the koji to fully convert the available starch in the cooked rice, yielding a glucose-rich, creamy drink. Temperature control is critical — Aspergillus oryzae amylases are optimally active between 55 and 60 °C (131–140 °F), a narrow window that must be maintained for the duration of saccharification.

Method

Cook rice using a standard 1:1.1 rice-to-water ratio. Cool to 60 °C (do not exceed 65 °C or amylase denatures). Combine warm rice and koji in equal weights in a rice cooker set to 'keep warm', an insulated cooler, yogurt maker, or dehydrator held at 55–60 °C. Stir every 2 hours. After 8–10 hours the mixture will taste distinctly sweet, smell clean and floral, and form a thick porridge. For a smooth beverage, blend with a small amount of water and gently reheat to 80 °C (not boiling) to halt enzymatic activity. Refrigerate immediately; consume within 5 days.

Tips

  • The temperature window 55–60 °C is non-negotiable: below 50 °C unwanted lactic acid bacteria outcompete the amylases, producing a sour off-flavor; above 65 °C amylase denatures and saccharification stalls
  • Use an instant-read thermometer and check every 2 hours — most rice cooker 'keep warm' settings run at 70 °C and must be cracked open or supplemented with a dedicated yogurt function
  • Avoid boiling the finished amazake; a gentle 80 °C heat-stop preserves the most volatile aromatics; hard boiling drives off the delicate floral notes from the koji
  • Amazake is a versatile sugar substitute in baking and dressings: 200 g amazake replaces approximately 100 g white sugar, though it adds moisture
  • Color indicates koji quality: a pale ivory to cream mixture is correct; any pink, orange, or green tinge signals contamination — discard

  • Brown rice amazake

    Use cooked brown rice; the resulting drink is nuttier and slightly less sweet due to higher fiber interfering with enzyme access to starch

  • Oat amazake

    Rolled oats substituted for cooked rice; popular as a dairy-free sweetener base; saccharification completes faster (6–8 hours) due to oat's looser starch structure

  • Shio amazake (salted)

    A pinch of sea salt (0.5% of total weight) added at serving; traditional serving style that rounds sweetness and adds umami depth

  • Thin beverage style

    Blend finished amazake with an equal volume of water for a pourable drink; heat gently with fresh ginger and serve hot in winter

  • High-koji ratio (2:1)

    Doubling the koji produces faster, more complete saccharification with higher sweetness; used when speed matters more than complexity of flavor

Notes

Non-alcoholic by design

Despite its name containing 'sake' (酒, alcohol), commercially produced amazake labeled 甘酒 (amazake from rice and koji only) contains less than 1% alcohol and is consumed by children, pregnant women, and those avoiding alcohol. It is distinct from sake lees–based amazake (sakekasu amazake), which is an adult product with higher alcohol content.

Nutritional profile

The saccharification process releases glucose, oligosaccharides, B vitamins (particularly B1, B2, B6, and folic acid), and free amino acids from the rice. This nutritional density earned amazake the Japanese folk title 'drinkable IV drip' and makes it a traditional recovery food for illness and postpartum care.
