Brine (Salt to Water Percentage)

3–10% salt by water weight — the range that covers everything from delicate fish to whole turkeys, with each percentage point shifting texture, flavor penetration depth, and safe holding time.
A wet brine is a salt-and-water solution in which proteins are submerged to season them from the outside inward and, at the correct concentration, to alter protein structure so that muscle fibers retain more water during cooking. Concentration is always expressed as a percentage of salt by total water weight (w/v), not by volume or by ratio to total solution weight. Different proteins, cuts, and intended cooking methods demand different concentrations, and food safety timelines depend critically on staying within correct ranges.
The proportions
- 1 liter (base unit)
- Water (cold or room temperature) — Always dissolve salt in warm water first, then chill completely before adding protein
- 30–100 g depending on target concentration
- Non-iodized salt (kosher or sea salt) — Iodized table salt adds off-flavors; kosher salt flake size varies by brand — always weigh, never volume-measure
- 25–50% of the salt weight
- Sugar (optional) — Balances salt, promotes browning (Maillard), helps carry aromatics into the flesh
- To taste
- Aromatics (optional) — Bay, peppercorn, garlic, citrus peel, herbs — added to warm water to bloom before chilling
Method
Weigh water into a large non-reactive container. Calculate salt as a percentage of water weight: for a 5% brine with 2 liters of water, use 100 g salt. Heat 25% of the water to dissolve salt (and sugar, aromatics if using) completely. Add remaining cold water to bring solution to refrigerator temperature before introducing protein. Submerge protein fully — weight down if needed. Brine in the refrigerator only (below 4°C). See timing guide: thin fish fillets 30–60 min at 3%; chicken pieces 4–8 hr at 5%; whole chicken/pork loin 12–24 hr at 5%; whole turkey up to 48 hr at 5%. Rinse, pat dry, air-dry uncovered in the refrigerator 1–2 hours before cooking to promote crisping.
Tips
- Always weigh salt — do not use volume (a cup of Diamond Crystal kosher salt weighs 136 g; a cup of Morton's kosher weighs 240 g — nearly double). Volume-based brine recipes are notoriously inconsistent.
- Chill the brine completely before adding protein. Submerging protein in warm brine raises the surface temperature into the food-safety danger zone (4–60°C) and can begin cooking delicate proteins.
- Over-brining produces a rubbery, bouncy, ham-like texture as osmosis draws too much water into cells, bursting them. Follow timing guidelines strictly, especially for fish.
- Dry the surface after brining: a wet surface steams in the oven rather than roasting. Rinse briefly, pat dry, then air-dry uncovered in the fridge on a rack for at least 1 hour.
- Non-iodized salt is mandatory — iodine reacts with proteins and imparts a metallic, medicinal off-flavor in longer brines.
- Sugar is not optional in smoked preparations: it fuels the Maillard browning and caramelization that creates smoke ring and bark. Use at 50% of salt weight for smoke.

- Light 3% fish brine
Salmon fillets, trout, delicate white fish; 30–45 min brine firms texture and seasons without toughening
- 5% poultry brine
The standard for whole chickens and turkey; 12–24 hours produces measurably juicier cooked meat (confirmed by Serious Eats moisture-loss testing)
- 8% pre-smoke brine
Pork shoulder or ribs before low-and-slow smoking; shorter brine time (6–8 hr) at higher concentration penetrates quickly and compensates for moisture lost in a long smoke
- 10% quick brine for hot-smoke salmon
Salmon sides brined 2–4 hr at 10% then pellicle-dried; high concentration sets a firm protein surface that accepts smoke cleanly and reduces albumin (white coagulate) during cooking
- Flavored herb brine for pork chops
5% brine with fennel seed, coriander, garlic, and thyme; brine 4–6 hr for chops 2.5 cm thick

How brining works
Osmosis and diffusion work in opposite directions simultaneously in a brine. Initially, osmotic pressure draws water out of the meat (which is why brine becomes diluted over time). Then, as salt concentration inside and outside the cells equalizes, the salt denatures surface proteins, causing them to unwind and create a gel-like matrix that physically traps additional water. The net result — after sufficient brine time — is meat that enters the oven with more water than an unbrined equivalent, and loses a smaller percentage of that water to evaporation during cooking. The effect is measurable: J. Kenji Lopez-Alt's moisture-loss testing showed brined chicken breast losing 14% less moisture than unbrined at the same internal temperature.
Salt concentration and food safety
Brining is not preservation. A 5% brine slows but does not eliminate bacterial growth. All brining must occur at refrigerator temperatures (below 4°C), and total brine time should not exceed published safe windows even if the protein appears unchanged. Extended brining in weaker solutions (below 3%) is risky; if holding longer than 24 hours is required, move toward an equilibrium cure (dry method) or add curing salts appropriate to the application.
