The traditional Italian cappuccino is defined by its three-equal-thirds structure: one part espresso (25–35 ml), one part steamed milk, and one part dense milk foam, served in a 150–180 ml ceramic cup. This ratio produces a drink that is visually distinct from both a latte (which skews toward steamed milk) and a macchiato (which is espresso with only a stain of foam). The foam in a traditional cappuccino is thick and dry — domed above the cup rim — and insulates the drink, keeping it warm longer. Modern specialty café practice has shifted the cappuccino toward a wetter, silkier texture with microfoam integrated throughout the drink rather than sitting as a distinct top layer, often served in a 180–220 ml vessel at roughly 1:2 to 1:3 espresso to milk.
The proportions

- Espresso — Double ristretto or standard double shot; the intensity of the espresso must stand up to the milk volume — a weak shot is swallowed

- Steamed milk — Heated to 60–65 °C (140–150 °F); above 70 °C the milk proteins denature and sweetness is lost

- Milk foam — Traditional: thick, dry, almost meringue-like; modern specialty: microfoam — silky, no distinct layer, integrated bubbles below 1 mm
Method
Pull a double espresso (25–35 ml) into a pre-warmed 150–180 ml ceramic cup. Steam 100–120 ml of whole milk to 60–65 °C, texturing it to create either dry foam (traditional) or microfoam (modern). Traditional method: hold back the foam with a spoon, pour the steamed milk, then spoon the foam on top to form a dome. Modern method: pour steamed microfoam in one continuous stream, tilting the cup, to create integrated foam with a latte art surface. Both methods aim for the same proportional result — a drink that is roughly one-third espresso by volume.
Tips
- Whole milk (3.5% fat) froths to the most stable, sweetest foam because milk fat coats and stabilizes the air bubbles; skim milk creates abundant but fragile foam that collapses quickly.
- Steam temperature is the most common error: above 65–68 °C the milk turns bitter and scalded; below 55 °C the microfoam is flat and watery.
- A pre-warmed cup matters: cold ceramic drops the espresso temperature immediately, collapsing the crema before the milk is poured.
- For traditional dry foam, steam the milk in a pitcher, then let it rest 20–30 seconds — the foam rises and separates from the liquid milk below, making it easy to pour liquid and spoon foam separately.
- In Italy, the cappuccino is a morning drink; ordering one after 11 AM or after a meal marks you as a tourist in most traditional bars.
- The cup size is non-negotiable for the traditional ratio: scaling to a large cup without increasing espresso volume produces a flat, milky drink that is no longer a cappuccino by any traditional definition.

- Dry cappuccino (secco)
Very little steamed milk, maximum foam; the espresso shows through the foam; popular in southern Italy
- Wet cappuccino (umido)
More steamed milk, less foam; approaches a small latte; common in northern Italy and Austria
- Modern specialty cappuccino

- Iced cappuccino
Espresso poured over ice, cold-frothed milk added; the foam-to-milk distinction collapses — a misnomer more than a ratio variant

Italian café shorthand for lighter (more milk) or darker (less milk) cappuccino; customer preference statement, not a standard ratio
- Oat milk cappuccino
Barista-formulation oat milks (Oatly Barista, Minor Figures) froth comparably to whole milk; fat-free milks cannot hold a traditional dry foam

What the 1:1:1 ratio actually means in a cup
In a 150 ml cappuccino cup, equal thirds means roughly 30–35 ml espresso (pulling slightly long from a double basket), 50–55 ml steamed milk, and 50–55 ml foam. The foam, being aerated, occupies volume without adding liquid weight — so the liquid content of the drink is closer to a 1:1.5 espresso-to-milk ratio by mass. This is why a properly made cappuccino feels less milky than its volume suggests: much of the upper third is aerated air, not dairy.
The Italian cappuccino versus the global cappuccino
The Istituto Nazionale Espresso Italiano (INEI) certifies cappuccinos to a strict spec: 25 ml espresso, 100 ml whole milk (steamed and foamed together), served in a 150–160 ml pre-warmed ceramic cup between 55–65 °C. This certified version is closer to a 1:4 ratio by espresso-to-total-milk volume, and the foam is integrated microfoam rather than the dry, spooned dome of older tradition. The divergence between the 1:1:1 textbook definition and actual Italian bar practice reflects decades of evolution — espresso machines became more precise, barista technique improved, and the sharp boundary between liquid and foam dissolved as microfoam became the professional standard.
