Chicha de Jora Fermentation Ratio (Grain to Water)

Peruvian malted-corn beer brewed at roughly 1 kg jora (dried malted corn) to 5–6 L water, fermented 3–5 days for a mildly alcoholic, tangy, amber-hued drink of Andean antiquity.

Chicha de jora is one of the oldest fermented beverages in the Americas, with continuous production from pre-Inca civilization through the present day. 'Jora' refers specifically to dried, malted corn — germinated maize that has been dried and sometimes lightly toasted. The germination process converts starches to fermentable sugars (as with malted barley in European brewing). The grain-to-water ratio governs beer body and alcohol potential: more grain yields a thicker, more alcoholic chicha; more water produces a thinner, quicker-souring session drink. Wild yeasts (often from the maize itself, the wooden brewing vessels, or the local environment) drive fermentation.

Method

Grind jora coarsely (do not flour-fine — retain husk character). Combine with water in a large clay or ceramic pot (olla). Bring to a boil and simmer 2–3 hours, stirring frequently, until liquid is reduced by roughly 20% and takes on a deep amber color. This boiling step gelatinizes remaining starches and sterilizes the wort. Cool to room temperature (below 30 °C). Transfer to a clean clay fermentation vessel. Wild fermentation begins within 24–48 hours. Ferment 3–5 days at ambient temperature (18–25 °C), tasting daily. At 3 days the chicha is sweet and lightly effervescent (chicha joven); by day 5 it is drier, more sour, and higher in alcohol (chicha madura). Strain through cheesecloth and serve fresh — chicha does not keep well after opening.

Tips

  • Source true jora if possible — home malting works but requires a 7–10 day germination-drying cycle; the quality of the malt directly determines fermentable sugar content and final flavor.
  • The 2–3 hour boil is not optional: it gelatinizes starches, extracts flavor from the grain, and creates the necessary wort for fermentation.
  • Clay fermentation vessels (tinajas) contribute to flavor — they harbor wild yeast communities built up over years of use, similar to sourdough culture.
  • Chicha sours quickly after reaching desired fermentation point; refrigerate immediately and consume within 3–4 days.
  • If making in a Western kitchen with no access to wild yeasts, a small amount of bread yeast or a tablespoon of unpasteurized cider guarantees fermentation.

  • Chicha joven (young chicha)

    Fermented only 2–3 days; sweet, low-alcohol (~1–2% ABV), cloudy — the version typically served at chicherías for daily drinking

  • Chicha madura (mature chicha)

    Fermented 5–7 days; drier, more sour, up to 4–5% ABV; preferred for cooking (ceviche marinades, braised meats) and ceremonial use

  • Chicha de maíz morado

    Made from purple Andean corn (maíz morado); deep purple color and anthocyanin antioxidants; same ratio but produces a more tannic, astringent beverage

  • Chicha de quinua

    Quinoa-based variant; grain-to-water ratio is similar but requires longer cooking to fully gelatinize quinoa starch

  • Chicha de muko (ancestral method)

    Made by chewing dried corn, then expectorating into the wort — human salivary amylase converts starch to sugar; the oldest technique, still practiced in some remote Andean communities; ratio unchanged but fermentation is faster due to salivary enzyme activity

Jora vs. fresh corn

Jora must be made from germinated, dried corn — not fresh corn, not polenta, not masa harina. The germination activates amylase enzymes that convert insoluble starch into fermentable maltose. Using unmalted corn would require external enzymatic addition (saliva, commercial enzymes, or added malted barley). The drying step after germination arrests the sprout while preserving enzymatic activity, and light toasting adds roasted notes.

Cooking rationale

Chicha de jora finds its way into Peruvian savory cooking — particularly in the northern coastal tradition — as a deglazing and braising liquid. Its combination of mild acidity, residual sweetness, and grain character makes it a functional stand-in for white wine in marinades and braises. When chicha is unavailable in a recipe context, a 50/50 mix of light beer and dry white wine is the nearest substitute.
