Cookie Dough (Sugar to Fat to Flour, 1:2:3)

The 1:2:3 shortbread baseline — one part sugar, two parts fat, three parts flour — that governs spread, crispness, and chewiness in almost every butter cookie.
The 1:2:3 ratio is the foundational formula for shortbread and short-dough cookies: by weight, one part sugar to two parts fat to three parts flour. It produces a tender, crumbly crumb with minimal spread because the high fat content coats the flour proteins before gluten can form, while the low sugar content limits caramelization-driven spread. This ratio is the baseline from which all cookie styles deviate: adding more sugar increases browning and spread; adding eggs introduces protein and moisture, creating chewiness; using brown sugar or corn syrup increases hygroscopic character and softness.
The proportions
- 1 part (e.g. 100 g)
- Sugar (granulated) — Powdered sugar produces a finer, more melt-in-mouth crumb (sablé style); granulated gives slight crunch
- 2 parts (e.g. 200 g)
- Fat (unsalted butter) — Softened and creamed; browned butter adds nuttiness but reduces moisture slightly
- 3 parts (e.g. 300 g)
- All-purpose flour — Cake flour makes the texture more delicate; bread flour adds chew
Method
Cream the fat and sugar together until pale and cohesive — do not overaerate; shortbread does not benefit from lift. Add flour all at once and mix only until the dough just comes together. Chill at least 30 minutes before shaping to re-solidify the fat, then bake at 325–350 °F (160–175 °C) low-and-slow until pale gold at the edges.
Tips
- Weight is essential — volume measures for fat and flour introduce too much variability to hold the 1:2:3 relationship accurately.
- Cold butter produces a flakier, more crumbly result; room-temperature butter creamed thoroughly produces a more uniform, snappy shortbread.
- Overmixing after adding flour develops gluten and makes cookies tough — stop the moment the dough clumps.
- Adding a pinch of fine salt (0.5–1% of flour weight) dramatically enhances sweetness perception and butter flavor.
- To shift from crisp to chewy, swap half the granulated sugar for brown sugar and add one egg yolk — the ratio moves but the fat-forward structure remains.
- Resting the dough overnight in the refrigerator allows the flour to fully hydrate and deepens flavor through enzyme activity.

- Classic Scottish Shortbread
Use rice flour for 10–20% of the flour weight to add sandy texture; press into a round and score before baking
- Sablé Breton
Add egg yolks for richness and a golden crumb; ratio shifts to 1:2:3 + yolk; salt increased for contrast

Replace 10–15% of flour with cocoa powder; reduce sugar slightly to compensate for cocoa's bitterness

Why the ratio controls spread
Sugar dissolves into liquid during baking and acts as a plasticizer; more sugar means more spread. Fat, conversely, coats gluten proteins and flour starch granules, preventing hydration and limiting structure. In the 1:2:3 ratio the fat-to-flour relationship (2:3) is exceptionally rich — nearly every flour particle is coated — which means the dough resists gluten formation almost entirely. The result bakes without spreading, holding its shape, and produces a distinctively sandy, shortening crumb.
Scaling for different cookie styles
Bakers describe the spectrum from crispy to chewy as a sugar × moisture interaction. Moving to 1.5:2:3 (more sugar) increases caramelization and spread. Adding 1 egg per 300 g flour introduces protein and moisture, pulling the cookie toward chewy. Adding baking soda (1 tsp per 300 g flour) raises pH, accelerating Maillard browning and creating a more open, slightly crisper texture. Understanding how each variable departs from the 1:2:3 anchor makes it possible to design any cookie style rationally.
