Italian Meringue (Sugar Syrup to Egg White)

Hot sugar syrup cooked to 118–121°C poured onto whipping whites produces the most stable of the three classical meringues.
Italian meringue is made by streaming a hot, concentrated sugar syrup (cooked to soft- or hard-ball stage) into egg whites that are simultaneously being whipped to soft peaks. The heat from the syrup partially cooks and pasteurises the whites while the rapid folding traps an enormous volume of air. The result is a dense, silky, extremely stable foam that holds its shape for hours without weeping — the benchmark for buttercreams, mousses, soufflés, and torched finishes. The ratio of syrup to whites (by weight) runs from 2:1 to 2.5:1 depending on target firmness.
The proportions
- 1 part (e.g. 100 g, about 3 large whites)
- Egg whites — Room temperature; fat-free bowl and whisk essential
- 2 to 2.5 parts (e.g. 200–250 g)
- Granulated or caster sugar — Combined with water to make the syrup; higher ratio = firmer set
- Approx. ⅓ the sugar weight (e.g. 65–80 g)
- Water — Just enough to dissolve sugar and allow controlled cooking; excess water lengthens cook time
Method
Combine sugar and water in a small, heavy saucepan. Stir over medium heat until sugar dissolves, then stop stirring and increase heat. Clip a candy thermometer. When syrup reaches 110°C begin whipping whites on medium speed to soft peaks. When syrup hits 118–121°C remove from heat immediately. With mixer on medium-high, pour the boiling syrup in a thin, steady stream down the inside wall of the bowl (not onto the whisk — spattering burns are serious). Increase speed to high and whip until the bowl is cool to the touch and the meringue holds stiff, glossy, satiny peaks, about 8–12 minutes. Use immediately or cover with clingfilm pressed to the surface.
Tips
- The syrup-to-white coordination is the main technical hurdle: if whites are over-whipped before syrup arrives the foam is too stiff to absorb it; if under-whipped it collapses under the heat — target soft, medium-peak whites.
- Pour syrup against the inside of the bowl in a thin stream, never directly onto the beater — syrup hitting a moving whisk splatters and solidifies on the bowl sides.
- A sugar thermometer is non-negotiable; even 5°C above target (126°C) produces a harder, less elastic meringue prone to cracking.
- If the finished meringue develops a slight sheen or small beads of moisture, the syrup was slightly under-cooked; return to the mixing bowl and continue whipping — it usually recovers.
- Italian meringue can be refrigerated for up to 24 hours; return to room temperature and re-whip briefly before use.
- For torching, ensure the meringue is thoroughly applied in a thick, even layer; thin patches scorch before the surface caramelises evenly.
Variations
- Italian meringue buttercream
Stream finished Italian meringue onto softened butter (equal weight to whites) while still warm; whip until pale, creamy, and spreadable — the most stable of the buttercream family
- Hard-ball syrup (121°C)
Slightly higher temperature produces a firmer, less tender meringue ideal for decorating or torching without collapse
- Soft-ball syrup (118°C)
Lower temperature gives a softer, more tender meringue better suited for folding into mousses and soufflés
- Honey or glucose variant
Replace up to 20% of sugar with glucose or honey to reduce crystallisation tendency and add flavour nuance; adjusts browning character under a torch
- Flavoured syrup
Infuse syrup with lavender, vanilla pod, or a splash of liqueur at the end of cooking; alcohol lowers boiling point slightly — account by targeting 115°C instead of 118°C

Pasteurisation and food safety
Italian meringue is the only raw-egg-white preparation that achieves safe pasteurisation without an oven. Syrup at 118–121°C raises the temperature of the egg-white foam well above 70°C (the pasteurisation threshold for liquid egg whites) in the seconds after contact. This makes it suitable for preparations that are never baked — mousses, icings, decorative torched toppings — where French meringue would leave raw whites and Swiss meringue may not reach consistent pasteurisation temperatures throughout.
Structural superiority
The heat from the syrup denatures egg proteins during whipping rather than after. This creates a tighter, more cross-linked protein network that resists drainage (weeping) and foam collapse far longer than either French or Swiss meringue. A well-made Italian meringue can hold at room temperature for 4–6 hours without significant deterioration, making it the professional's choice for plated desserts and show pieces.
