Kheer / Payasam (Milk to Rice to Sugar)

1 litre whole milk to 50 g rice to 100 g sugar — simmered until reduced by a third and thickened to a pourable cream.

Kheer (North India) and payasam (South India) are the same essential preparation: whole milk slowly reduced with rice and sugar until thickened by evaporation and starch release. The baseline ratio — 1 L milk : 50 g rice : 100 g sugar — produces a gently sweet, pourable pudding. Long reduction concentrates the milk proteins and fat, producing the characteristic creamy, slightly caramelized flavor. Substituting jaggery for refined sugar adds a significant hygroscopic quality that makes the finished dish slightly more liquid and faster to thicken on re-heating.

Method

Rinse rice until water runs clear; soak 15–20 minutes, then drain. Bring milk to a boil in a heavy-bottomed pan, stirring frequently to prevent scorching. Add drained rice and reduce heat to a gentle simmer. Cook, stirring every 3–4 minutes and scraping the sides and bottom, for 35–45 minutes until rice is completely soft and milk has reduced by approximately one-third. Add sugar and cardamom; stir to dissolve. Continue simmering 5–10 minutes until the mixture coats a spoon but is still pourable — it will thicken further as it cools. Remove from heat. Stir in saffron milk and a tablespoon of ghee if desired. Serve warm or chilled.

Tips

  • Use a heavy-bottomed or nonstick pan — thin pans cause milk to scorch on the bottom, imparting a bitter flavor that cannot be fixed.
  • Stir constantly for the last 10 minutes of cooking; as the mixture thickens, the risk of scorching increases sharply.
  • Rice doubles in volume when cooked; if the finished kheer looks too thick, add a splash of warm milk to thin — never water.
  • Chill kheer in a wide, shallow container rather than a deep pot to prevent the top from skinning; press plastic wrap directly onto the surface if making ahead.
  • Jaggery must be added off the heat: the combination of its impurities and high heat destabilizes the milk proteins, causing separation.
  • A tablespoon of ghee stirred in off the heat adds richness and a glossy sheen.

Variations

  • Jaggery substitution

    Replace white sugar with 80–90 g jaggery (slightly less, as jaggery is sweeter and adds body); add only after removing from heat — jaggery added during cooking can cause milk to curdle at high temperature

  • Coconut milk payasam (Kerala Ada Pradhaman)

    Replaces dairy milk with coconut milk; rice replaced with ada (rice flakes); jaggery mandatory; very different texture — thinner and more intensely sweet

  • Phirni

    Same milk and sugar ratio but rice is soaked and coarsely ground to a paste rather than cooked whole; produces a thick, set pudding poured into shallow clay cups (matkas)

  • Semiya payasam

    Vermicelli replaces rice; cooking time reduced to 15–20 minutes; popular for festivals across South India

  • Condensed milk shortcut

    Replace 250 ml milk and all sugar with 1 tin (400g) condensed milk; add at the end of cooking; dramatically reduces simmering time but lacks the depth of the long reduction

Notes

The science of the long reduction

As milk simmers, water evaporates and the concentration of dissolved lactose, proteins (primarily casein and whey), and milk fat rises. Lactose partially caramelizes, contributing the subtle toffee notes that distinguish slow-cooked kheer from a quick condensed-milk shortcut. The casein micelles, gently stirred and heated over 40+ minutes, form a loose network that gives kheer its body without curdling — provided the temperature stays well below a boil. Starch released from the cooked rice thickens the liquid further. Together, these mechanisms produce a suspension that remains pourable warm but sets to a spoonable cream when chilled.

Jaggery and texture

Jaggery (unrefined cane sugar, gur) contains 2–5% mineral impurities, residual molasses, and trace organic acids. These acidic compounds can destabilize casein micelles when combined with heat, causing milk to curdle or break. Traditional technique addresses this by removing the kheer from heat before stirring in dissolved jaggery. The resulting pudding is noticeably more hygroscopic (attracts moisture from the air) due to jaggery's higher invert sugar content — it stays slightly more fluid overnight and has a richer caramel-molasses character compared to white sugar versions.
